A custom blend of the beers of Bear Republic, Cuvee de Bubba is refermented in oak wine barrels using only the wild micro flora and fauna native to the Alexander Valley. A bouquet of stone fruits with a complex flavor profile of malt, tobacco, and cherry pie sourness.

Cuvee de Bubba won a Silver medal at the 2012 Festival of Wood and Barrel-Aged Beer in the Wild Acidic Beer category.

Tap. Pours clear reddish amber with a small off-white head that leaves decent lacing. Aroma is tart cherry, oak, funk, and red wine. Flavors are about the same, plus some lemon and tobacco notes. Lightly sweet, medium tart with a dry finish and a light metallic aftertaste. Medium body. Not bad, but lacking the depth of the best sours.

Sampled from the tap at FOBAB 2012. Pours a clear light amber with a near white head that dissipates to the edges. Aroma has sour pie cherries with some grapefruit and a bit of acid underlying. Flavor has similar sour cherry note with bitter grapefruit a hint of sweet grain and a dry finish.

Very interesting. Tawny brown. Cherry, dried rose and cumin aromas, with flavors of puckering citrus, tobacco, tamarind, and sour cherries. But somehow, it worked.

On tap at Hamilton’s. Hazy dark orange amber with tiny head and no lace. Nose is high tart light sweetness and flat yeast smack. Hints of cinnamon and cherry. Taste up front is nice tart sweet funkiness with bit of yeasty bite. As it moves in the mouth the flavor drops significantly in quality. Goes kinda odd. Not exactly petroleum but not far away from it. Gooey, and not specifically in a good way. Kinda burnt. Not a drainpour by any measure, but disappointing based upon initial expectations.

From a GABF bottle, pours clear salmon amber with a soapy head. Nose is big wine barrel, lightly acidic, red berries, some tropical fruits, passionfruit, a weird, off, diapery note. Mouth is refreshingly sour on the front, lots of red berries and tropical fruits, medium acidity. Reminds me of Allagash Interlude but not as tight, a bit more acidic. Pretty nice.

At The Local Beer Bar in Eureka, CA on draft. Pours a cloudy amber with a nice off-white head and good lacing. Nose is a great sourness . Medium in body and very smooth of mouthfeel for a wild ale. Flavor of stone fruits with a wine like finish probably from the wine barrels. Delicious.

On tap at Samuel Horne’s, Folsom. Pours reddish brown with a thin beige head and a cherry aroma. There is a slightly sour cherry flavor with a tart finish. A bit too thin.

On tap at Bistro BA Fest poured a clear amber with a small lingering amber head. Aromas of carmel, citrus, light cherry and light barnyard. Palate was light bodied and crisp with a dry tart finish. Flavors of citrus, straw and light barnyard with a crisp dry tart lingering funky finish.

On draft at the Bistro Barrel fest. It pours orange with an off white head. The aroma has tart stone fruit and mild acetic funk. The flavor has a well balanced wildness that doesn’t shred the throat. This was prettty well executed.
