A custom blend of the beers of Bear Republic, Cuvee de Bubba is refermented in oak wine barrels using only the wild micro flora and fauna native to the Alexander Valley. A bouquet of stone fruits with a complex flavor profile of malt, tobacco, and cherry pie sourness.

Cuvee de Bubba won a Silver medal at the 2012 Festival of Wood and Barrel-Aged Beer in the Wild Acidic Beer category.

A: The beer pours a hazy golden amber color with a small white head. S: The nose features a Mild vinegar note as well as a distinct Cheerios character. There is some wet oak and grass as well as the ever popular straw/hay. A little booze and a mild malt sweetness. T: The flavor starts out with a slight sweetness followed by plenty of grass, green apple, and lemon zest. As with the aroma, some vinegar is present, as is the cereal sweetness and flavor of Cheerios. M: Medium in body with a medium carbonation. O: While not atrocious, this was not very good by any means.

Aroma: not a great deal happening but what is there is pretty good. The wine soaked wood shows through pretty well.
Appearance: Cleanish golden brown with a thin off white head and some lace.
Flavour: Big white wine barrel with some excellent almost smoky wooden notes. Expertly pitched sourness. Just the right amount of juicy and puckery sour with a hint of acidity.
Palate: Smooth as you like but dry at the same time. Feels like a Belgian lambic and obviously, that’s no bad thing.
Overall: Massively underrated if you ask me. Easy to drink but plenty sour, just not dry enough to really challenge your palate. No alcohol apparent and the finish is superbly long and juicy.

A very very good beer with the barrel integrated really well and the blend has been done with care and attention. Love it.

Tap @ Apex... Poured amber/burnt orange with a white head. Acidic nose with hints of vinegar. Lots of fruit tones, wine-like alcohol and yeast characters. Apricots, oak, sour funk, with hints of Brett and peddio.

Draft @ FoBAB 2009, Chicago, IL. Pours a hazy golden amber color with a small off-white head. Has a fruity sour funky weak oaky aroma. Fruity malty weak sour funky caramel flavor with oaky hints. Has a fruity sour tart funky finish.

1 oz sample at the GABF. Light amber, yellow color. Clear. Live fizzy small bubble carbonation. White lacing. Heavy apple sweet malt aromas. Dry finish with a lingering bitterness. Light body.

GABF. Clear orange, almost no head. Aroma is barnyard, light funk throughout throughout, light sweetness. Taste is tart throughout and has strange bitterness in finish that mixes in oddly. Not my favorite sour, but not bad. Something is missing, needs more depth.

sampled at FOBAB 2009... poures a semi-transparent apple cider brown pour with a thin white head... semi-bretty nose with sweet pineapple accents... flavors combined for both a tart and sweet quality, somewhat muted and earthy/mineraly. livey carbonation, soft mouthfeel.

Pours golden with no head. Decent nose wood and tart funk. Flavor goes more fruit and grain with some odd funkiness. Not much in the finish.
