COMMERCIAL DESCRIPTION
Sotoyome ABV: 7.0% Sotoyome is a dry, tart and fruity amber ale matured in oak barrels from a local winery and spontaneously refermented in the cask with wild yeast.

Dark red with a creamy tan head. Alcohol and sour green apple aroma. Chewey palate. Tastes of leather green apple and a funky musty finish. Interesting.

Draft. Dark amber with a light tan head. Tart aroma with wine barrel notes and light malt. Rich malt and dark fruit flavor with a nice tart or sour note. Medium body. Red fruit, malt, tart berries, and light oak linger.

Served on draft at the brewpub in Healdsburg. Pours a deep, dark chocolate brown color that is competely opaque with some dark cherry red/mahogany edges and a one finger off white head that slowly fades into a thin lasting ring that leaves sporadic spots of lacing behind. Sweet vinous aroma with some nice vinegary funk and earthy oak notes. The funkiness isn’t overbearing allowing some dark fruit and subtle malt to come through. Hints of grape, plum and raisin with some slight tannis. Excellent nose. Medium bodied with a strong sweet vinous, vinegary funk in the finish. Lots of dark fruit, especially tart dark cherry, grape and earthy oak. Possibly some vanilla. The wine, which is cabarnet, is very prominent and leaves a lingering sweet vinous, vinegar finish. Very good. I really liked this beer and wished that I could drink more.
