#oncask at Cest’What What. Pours a cloudy dark ambar colour with a small foamy off white head. A bit cold, so not much aroma to start with. Flavours are muted but caraway seed / mint com through. Definetly something vegetal happening here. Some lace, almost no bitter, lingering herbs. Interesting beer.

Tap at Volo. Very cloudy amber pour, thin white head. Aroma is pretty yeasty, almost a dunkel character. Little bit floral, nutmeg and sweet maltiness. Medium body. Flavour is bready, little bit nutty and some molasses. Clean finish. Nothing extreme going on here but nice balanced brew.

On cask at Vole. Pours a medium amber brown. Aroma is quite earthy with some malt and spicyness. Taste is similar with lots of malt sweetness and some interesting flavours backing it up. Whether it is earthyness or spicyness it definitely lives up to its name. An interesting beer but I’m not quite sure I really love it.

Gave my friend a blind tasting of this one, told him it was an IPA. Fantastic brew, and it’s just wonderful to see such experimentation from an Ontarian brewer. This is the type of beer our ancestors drank and it’s a real shame that it’s disappeared for so long. Thanks, guys, for bringing it back; I plan on sharing it with more friends in the future. The herbs are quite the shock at first, but after a few sips it just glides right down... lovely complex taste just mulling in your mouth. The head is just beautiful. I know it’s based on the local ales, but if I could compare this with one style it would be the strong Belgians.

600ml bottle. Nice clear amber body, low head, not much of a retention.
Aroma is sweetish, hops, malt, caramel, quiet herbal and refreshing.
Taste is malty, sourly, medicinal, sweet, a little oily. OK beer.

Ginger, sage, wheat, pumpkin, cinnamon on the nose. Pours a dark amber with a persistent creamy head. A very crisp sensation on the palate. Taste’s like a gingerbread house. If one could ’drink’ a gingerbread house.

from bottle. pours a very appropriate murky brown with a tan head. malty aromas, maybe some roasted nuts. pleasant taste predominantly malts but with a lacing of bitterness either from hops or the herbs and spices i’m not sure. Speeking of added herbs and spices, i personally don’t notice them in here. If i didn’t know they were there i wouldn’t taste them, thats probably a good thing though as it makes their blend more subtle.

Pours a hazy amber with a small, tan head. Nose is very spicy and herbal. Dark fruit, red licorice, raspberry, yeast funk, brown sugar. Mouth feel is chewy with medium carbonation. Taste is cherry, raspberry, grass, herbal, green apple, stale gummy bears, and burnt toast. Finishes slightly bitter and dry; vinous, grassy and sour. Unique brew that gives off a holiday vibe without turning to cinnamon and ginger.

Glass bottle from the LCBO. Pours a coppery red with a little head that dissipates nearly immediately. Smell is sweet and a bit floral, definite caramel coming through with maybe a tiny bit of cinnamon. Palate is perfect for me, some carbonation that lingers a bit but provides a nice and not overly harsh sensation on the palate. Taste is pretty good, medium sweetness and a little bitterness, definitely goes more towards the sweet side. The added spices are definitely noticeable and very interesting. Can’t say I’ve ever had bog myrtle or sweet gale before. Aftertaste is a bit sweet, but disappears quickly. A decent beer overall.

Bottle from brewery store. Drank 3.5 months after bottling time (stored in fridge). Seems to have lost some carbonation. Small amount of tan head. Found yeast at the bottom of my glass, and it clouded up the beer. Not a big deal, but a surprise. Murky red brown colour. Smells of vegetables, lemon/lime citrus. Malt and myrtle are balanced till about halfway through, before giving way to sour myrtle flavour quickly. Medium lemony finish. Tastes sort of like an unbalanced summer beer. Feels like an odd choice for winter. I usually love Beau’s, but this is the closest thing to a disappointment I’ve had with their beer. Still, I would enjoy it on a hot summer day, which is when this beer should be available.
