2012-01-06. Very dark brown body with a small foamy brown head. 3+ Sweet aroma, lots of vanilla and bourbon, very mild roasty malt. 7+ Flavour is similar, rich vanilla and wood, very mild roast. 7+ Smooth medium bodied palate. Pretty nice, the bourbon character is overly strong for my own palate, but the overall impression is that is more well rounded than some others, and bourbon lovers should enjoy this one. Bottle [600ml] shared with HogTownHarry, garthicus, GregClow, jerc & mabel -- c/o j&m. Jan. 6. Pours a very dark brown with a small lasting frothy tan head. Aroma and flavour of vanilla, wood, roasted malt, chocolate, coffee, dark fruit and a hint of alcohol. Medium bodied. I quite liked this,. tt’s not overly "barrel-aged" which I appreciate, it’s more subtle and drinkable.

[4232-20120106] 600mL bottle. Sweet stew meaty malt roast aroma has a light vanilla wood background. Hazy, red-infused black body with a medium-lasting creamy light tan head. Sweet heavy vanilla roast continues in the flavour with just a hint of celery. Medium body. Tasty, nice to contemplate. (7/4/7+/3/15) 3.6~

Thanks to Jerc & Mabel. Appearance: Cola body, tanned off white head. Aroma: Vanilla, barrel, whiskey, oak, alcohol, spice. Flavour: chocolate, a little weak body, vanilla, oak, spicy, a little wood in the finish. Not bad. ---Rated via Beer Buddy for iPhone

Beau’s Matt’s sleepy time Belgian imperial stout Nice deep and thick brown black robe. Malty, chocolaty and slightly nutty aroma. This 9% imperial stout surprisingly does not show how potent it is. While the alcool does not over power the strong aroma, it lets the oaky notes shiny through betraying the roots of this cask aged fine stout. not any casks mind you, a bourbon barrel no less. while this beer’s bitterness shows it’s face on the begining its finishes on a long caramel note very ’suave’ (or it could be the south american sun I’m under while savouring this god’s nectar). This is Beau’s first beer sampled from their "Greener future project" (and the others to come soon as i got alll three). Beau’s was launching this project at their fifth anniversary. It garantees you their brews as they come out (i’m said only 200 bottles are made per batch... buy ,ore caks guys!). BTW, you should give out some schwag with the membership!!

600ml bottle from the brewery. sampled in tulip glass. pours a very dark, opaque brown with a beautiful moka coloured head that stays. aroma is intensely oak, with some roasted malts and caramel. not your typical imperial stout, this beer is loaded with dark fruits up front to give it that belgian twist. it becomes more grainy and roasted in the finish, with some hops to help balance everything out. medium to low carbonation, it has a nice sticky mouthfeel to it. not as thick as i would have liked, but still great. this is the best product i’ve had the pleasure of tasting from beau’s yet. note: when warmed to room temperature, the complexities come out banging the palate. strong notes of dark chocolate and oak suddenly appear where they weren’t before.

Love this one! Huge up front coffee, and bitter chocolate presence. Maybe some light vanilla as well. Some alcohol burn in the middle, but not in a bad way, it is pretty well covered. Then a long bitter finish on the end with the bourbon coming through. Great stuff. Reasonably light in the mouth for such a big tasting stout.

Bottle - 600ml. Dark brown body with a thin off-white foamy head. Superb malty/hoppy aroma with chocolate, vanilla, and fruity hints. Alcohol is very well hidden. Complex taste carries cocoa and some woody/bourbon notes. Ends with a long, warming bittersweet finish. Awesome!

Diogène (1000) - Mirabel, Quebec, CANADA - AUG 7, 2011
Bottle purchased at the brewery. Very dark brown, almost black with a thin beige creamy head with above average retention. Aroma is roasted malt, chocolate, vanilla, a bit of coffee and subtle bourbon with a hint of alcohol. Flavor is chocolate, toasted malt, vanilla, alcohol, herbal hops, subtle bourbon and wood, a hint of spices and a bitter finish. Medium body with a moderately creamy mouthfeel and moderate carbonation.

Decidedly more complex than the Bourbon Aged Bog Water but less Bourbon-driven. The oak/vanilla comes through more in the finish and is a little weak in my opinion. However, coffee and chocolate bounce off the tongue and juxtapose the slightly sour Belgian ale flavors. I’m guessing they went for something like a marriage of a Belgian triple and a black-as-night imperial stout with a swath of oak. They succeeded.
