COMMERCIAL DESCRIPTION
Wag the Wolf is a weissbier (wheat beer) that has been generously “late-addition” hopped with organic New Zealand varieties to provide abundant aromas of citrus and tropical fruit. Made with 65% wheat, and fermented with a traditional German weissbier yeast, expect pleasant fruit and spice flavours with a restrained bitterness on the finish.

History & Style
Our hopfenweisse, is a hop-forward and North American twist on the Bavarian weissbier. The traditionally fruity, spicy and refreshing weissbier is matched with big hop aromas of citrus and tropical fruit.

Tasting Notes
Hazy and pale gold in colour. Notes of banana, clove, papaya, mango and citurs on the nose. Lively carbonation with pleasant maltiness. Spicy and fruity, with a slightly dry finish.

Food Pairings
Sausage, Duck & Game Fowl, Goat Cheese, Summer Salads. Plays nicely with spicy food.

Draught at The Craft Brasserie. Decent wheat base with banana, clove and pepper mixing up nicely with a rich fruity hop bouquet, orange and mango, short bitter finish. Maybe not as full-bodied as I hoped, but a pretty tasty and enjpyable hoppy white.

600 ml bottle. Pours a slightly veiled pale yellowish straw with a thick, resilient white head. Aroma is tropical fruit, oranges, hoppy. Flavor is fruits, wheat, tropical fruit. Finish is grapefruit, bitter, lemon. Medium body, velvety mouthfeel, average carbonation.

Dorée et voilée, une énorme mousse la recouvre. Des arômes fortement houblonnés, entremêlés de poire et de poivre. Une amertume sèche. Des saveurs de zeste de citron et de levure rustique. 600ml bottle from Halles St-Jean. Aroma: loads of citrus mixed with wheat and some pepper. App: hazy pale, huge white head and shy lacing. Taste and palate: thin to medium body, resinous, a bit of banana in mouth, dry medium bitter finish. Overall: good but not a hefeweizen to me. Too bitter, too hoppy, not enough banana in the nose. Aside from that, it’s still easy to drink.

600 ml bottle from the LCBO. Pours a golden orange colour with a generous foamy white head. Aroma is wheat, bread, fruits, hops. Taste is same, plus banana. Very good beer.

Bière jaune tirant un peu vers l’orangée, parfaitement voilée, bonne effervescence, et surmontée large col blanc immaculé, très dense et très mousseux, et qui se réduit tranquillement en laissant une certaine dentelle sur les parois du verre. Arômes de pain frais et de blé, de pâtisserie et de sucre brut, accompagné d’évidentes effluves de houblon principalement fruité (orange et autres agrumes, mangue, cantaloup, pêche/abricot…) présentant également quelques odeurs d’herbes et/ou de conifère. Arômes aussi quelques peu épicés (clou de girofle, poivre… mais également des odeurs plus herbacées, de la coriandre, etc…) avec pointe de banane (esters de fermentation). Nez fort intéressant, complexité très élevée, mais intensité plutôt moyenne. En bouche, pétillement moyen sur la langue, mais onctuosité bien élevée sur la langue, on ressent très bien le velouté typique des bonnes bières de blé. Au goût, pain frais et pâtisserie, blé, léger sucré (miel et sucre brut), accompagné d’un houblon fruité et résineux, en route vers une finale à l’amertume de faible à modérée. On retrouve les épices et la banane en bouche, mais elle reste plutôt en arrière-plan, et on note également un alcool bien perceptible, peut-être un peu trop en fait. Mais autrement, l’équilibre malt/houblon est fort intéressant, et l’intégration des différentes saveurs entre elles est bien réussie. Belle complexité, et bonne intensité en bouche. Il s’agit vraiment d’une très bonne bière!

Pours cloudy straw with gold edges;the head is off white and foamy. The aroma has notes of: orange zest, cereal, coriander seed, and wheat funk. The taste is medium light bitter and lightly dry; the aroma notes carry through to the taste. The palate is medium bodied and has medium carbonation, with a medium finish. Overall, it’s more like a Saison than a wheat beer - still tasty though.

Strong aroma of cloves and assorted spices. I get plenty of banana, lemony citrus, more spices and a ton of epic smoothness. I like this beer a lot
