COMMERCIAL DESCRIPTION The Bollywood of beers. We wanted to build a recipe which really pushed the love affair between dark malts and hops. So we designed the brew around allowing the hops to sing on top of a dark malt bomb. We aimed to brew an almost dark chocolate-like base beer and then piled on with the tropics of summit and centennial hops, lifting the waves of smooth chocolate off the tongue. We categorise Holy Cowbell as an India stout. ‘India’ coming from the same meaning behind ‘India’ pale ale. Basically lots and lots of hops added in their masses at the end of the boil and then in dry hop, to extract maximal hop flavour and aroma!

Une black IPA anglaise qui score si fort sur une plateforme majoritairement utilisée par d’exigeants amateurs de houblons américains; j’étais fort sceptique. Mes expériences avec le houblonnage à l’européenne ne m’ayant pas impressionné outre mesure, j’anticipais ici un liquide passablement houblonné et gris. J’ai eu tout faux. Liquide qui passe facilement pour noir alors qu’on remarque aisément, lors du versement, qu’il est plutôt clair, translucide et d’allure légère. Mousse plus qu’abondante et collante au verre telle une colle à mousse, au verre... conché! Une explosion d’herbes et de fleurs printanières, de pot-pourri, de parfum de salle de bains et de lavande. C’est surprenant à quel point l’aromatique occupe une place prédominante dans cette bière aux parfums puissants. Une mince torréfaction se fraie un chemin à travers cette explosion végétale. C’est toutefois en bouche que l’équilibre jusqu’ici déficient est atteint. Une attaque bien nette de café froid et de grains rôtis, véhiculée par une amertume quasi absente. La verdure n’est plus aussi percutante mais encore présente. Bière parfaitement à cheval entre la IPA et le stout. Jolie réussite!

33cl can at home from Oedipus Int. Beer Festival 2016. Nose is citric roasted malt. Body is nearly black. Head is big, beige, rocky, mostly lasting, excellent lacing. Aroma is tobacco, old wood, dried fruits, spices. Light sweet, medium bitter. Finish is medium lasting roasty medium bitter. Medium body, dry texture, average carbonation. Easy dessertish beer, tasty, nice one.

Tap @ Cafe Hesp. Generous pour from the landlord. Black. Blackberries, roast and malt in the aroma and flavor. Floral, perfumed, caramel. Sweetish. Nice one.

Tap at the brewery then can at home. Almost black with a creamy tan head. Great aroma mixing hops, fruits, chocolate and roasted grains. Flavour is the same with smooth carbonation. Lovely.

Can. Pours black with nice slightly beige head. Aroma of roasted sunflower seeds, coffee and pine with some caramel and chocolate. In taste medium sweet with note of coffee with milky chocolate and citrus. Medium body, smooth, slick with soft carbonation, finish is bitter.

Tasted from the tap on the 02/10/2016. Hazy brown colour with a small tan head. Aroma is dark roasted malty and grapefruity hoppy. Taste is intense roasted dark malts, hops and bitter. Bitter aftertaste. Next one please!

UPDATED: SEP 23, 2016 330ml can. Pours black. Aroma is bitter dark chocolate and toast. Flavour is bitter, but not bitter hops. Instead it’s bitter chocolate and coffee. This is more a stout than a black IPA, but that’s fine with me.
