Bu au Festival Bière et Saveur 07 (fut). Rousse pale, peu de collet. Arome d’épinette très présant, avec un peu d’épices sucrés et de malte caramelisé. Goût d’épinette sûrette, avec un peu de malte doux. Très intéressant!

12 oz glass on tap at grand cru event. Slightly hazy blond pour with snow white head. Aroma is like rolling around in freshly cut spruce branches, tons of tropical fruit aromas too, mainly pineapple. You feel afraid to bring the glass to your lips because you feel your lips might stick to it. They do, but not because of the sap. Super fresh sprucey flavor, some malty sweetness, almost minty with a lingering bitter finish like fine hops. Beer had medium body and good carbonation. Surprisingly very good.

Objectively speaking: For a spruce beer, a remarkably tasty and rounded ale.
I like: Excellent spruce extraction, not overwhelming, but tasty, aromatic and fresh. No stickiness on the palate. Fresh cerealic malt base never steals the show. Gentle herbal undertones. Sweet, yet textured enough, medium-full bodied and cleansing, active and fitting carbonation. Good-looking as well with its minimally hazy bright auburn hue. The head is gorgeous, climbing. Surprisingly drinkable.
I dislike: I really liked it, but it’s not a flavour orientation that requires a second pint.

Festival Bières et Saveurs 2008. A spruce beer, which is what they gave soldiers in Eastern Canada to ward off scurvey and replenish vitamins, even though they were posted on land. But hey they enjoyed it. Good thing the British were around whenever the Americans invaded. Oh, and my dad was still given this when posted earlier in the World War in Quebec when he was with the Royal Engineers. Pale yellow with a white head and lace. Creamy yet below average mouthfeel. Spruce made it quite sour. Herbal aroma. I had a much more interesting variation of this by DDC years ago. Oh, and my dad’s friends brewed a terrible version of this when I was young.

Pours a clear dark gold color with a thin white head. Aroma of spruce sap, cereals and menthol. Flavor of spruce sap, cereals and menthol, it’s very sweet. The body is light to medium with a liquorous and sticky texture and gentle carbonation. Nicely done.

On tap at Bieres et Saveurs Chambly. It has a honey color with a thin white head. The taste is of pine and just an after taste of fruit.It is sweet but it just is not my kind of beer, but that does not mean that it is not good.

A golden ale with a thin white head. Very nice spruce aroma, with berry and caramel, and pine needles. In mouth, a lightly sweet malt with light hops and spruce in finale, soothing. Medium bodied. A walk in a coniferous forest. On tap at the brewpub, August 30, 2007.

Amber-orangeish color, with a thick small creamy white head, leaving laces, a sweet mild earthy blue pine niddles nose, with a subtle juniper fruity note, a nice coniferous forest accent, with a toasty malt aroma follows through on a medium-bodied palate with a sweet toasted malt, mild , pine wood character of spruce bleue pine niddles, with a green coniferous forest, and cedary accents, with a subtle fruity juniper, and a hint of flowery hop, leading towards a fruity, piney finish.

Verre de dégustation, provenant d’un fût, dégusté au Festival Bières et Saveurs 2007 (Chambly, QC). Arôme: Odeur d’épinette avec une pointe d’épices. Apparence: La couleur est ambrée pâle. Saveur: Goût d’épinette avec une pointe de miel. Durée moyenne de l’arrière goût. Palette: Le corps et la texture sont mince. Faible effervescence en bouche. Légère présence d’épinette en arrière goût. (Rating #1213)

Clear copper body with a small off-white head. Conifer resin flavour well harmonized with the soft-caramel. Minimal hops presence if any and even less fruity or spicy hints. Smooth carbonation. Really soft overall. This beer main purpose is to put forward a spruce resin taste with little to divert the attention away from it. And it does that very well. What it lacks in complexity it makes-up for it in originality. Fun beer, really worth a try. In a little over three months I’ll be decorating an unprocessed beer.
