1 year old on tap at the brew pub. Dark brown, thin white head with good retention. Aroma is cognac, whisky, caramel, resinous hops, wood, raisins and alcool. Flavor is similar. Very good barley wine.

12 oz glass on tap at grand cru event. Murky brown pour with a bit of lacey head. Aroma of green apples, fermentation, syrup, alcohol and whiskey. Taste is boozey, cloyingly sweet with a fruity astringence. Palate has low carbonation and is pretty hot. I tried this beer cool and at room temperature, before and after other beers, with a clean and with a dirty palate - but I never found it enjoyable. Certainly my least favorite of the day.

(Le Tonique, vieilli en tonneau de chêne durant 1 an et 7 mois) Le liquide a une couleur ambrée qui tire sur le rouge. Le col mousseux est mince. Présence d’une petite dentelle. Au nez, des arômes de whisky se perdent en vapeurs d’alcool boisé et enrobent un malt qui suinte le caramel. Au goût, la force alcoolique et fruitée du whisky est significative. Les saveurs maltées se renchérissent et deviennent grasses. En bouche, le liquide est de moyenne corpulence avec une effervescence fine et une texture pratiquement liquoreuse. La finale est réconfortante avec une amertume d’alcool et de houblons doux. En résumé, très agréable.

on tap at the brewpub. ordered from the Grand Cru menu, this beer is aged 1.5 years in oak barrels that once contained whiskey. pours a dark amber with a nice tan head that stays forever. aroma is very woody. caramel and whiskey definately there in the nose as well. taste is similar, with some resinous hops to balance out the sweetness in the end. full bodied and low carbonation, i liked this one far more than their Hordeum.

UPDATED: AUG 12, 2010 Tap in Mascouche at the Oktoberfest, near the greenest pond I’ve ever seen (nevermind...). Seemed very, very alchoolic because of the oak-aged 13 months effect. Orange also came out pretty strongly in the aroma and in the taste but the whishy side is very, very aggressive. If you like that power aroma, you’ll like it all... God did I. Sweet caramelized malty body and btter finale. And it got more complex as it warmed up. The best beer I had that evening. ADDED: Tap at brewpubin feb.2010, 10 month age, the weekend before the 5th anniversary. Whisky is still very obvious in this batch! I raised the rating. Very malty and hoppy base but the oak-aging is outstanding on this one. Truly amazing. ADDED: Third barrel in august 2010 (I’m so damn lucky to have tasted this batch in the three different barrels. This third batch is again simply amazing. So much whiskey aroma, and notes of chocolate, an intense piny hopping. Powerful divine stuff. MAJESTIC. My clear favorite from this brewer. You gotta age some more in the same way, Nicolas.

On tap at the brewpub, cloudy amber-mahogany hue, with a beige head, nice fruity, woody, oaky, whyskish, grated coconut nose, with some faint dried candyish raisiny, pruney accents, with some hints of brown chocolate and vanilla in a warm toasted, caramelized malt aroma follows through on a full-bodied palate of a warmth liquorish, sweet toasted, caramelized malt, fruity raisiny character, with a good woody whiskyish, vanilla, coconut flavor, with a kind of a hint of maple syrup, chocolatey praline, leading towards a warming fruity, raisiny, chocolatey, woody, hop leafy resiny dry finish.

11 month old. An orange dark amber ale with a thin off white head. A wonderful woody aroma, with treacle, light olives (almost pleasant), vinous, earthy, intense and porto-like. In mouth, an oaken mlat with porto qualities, funk and hops. A rich and warming barley wine, balanced and coherent. On tap at brewpub, May 10 2009.

Bu sur place le 12 avril 2009, en fut (12 oz) et vieillie de 10 mois. Ruby cuivrée, petit collet beige avec de la dentelle. Arome d’orge malté brute, fruits mures et alcoolisé. Goût un peu licoreux, caramel boisé qui n’est pas riche mais plaisant, une finission amère et sec. Très agréable avec cette touche boisé, plus vieille elle serait débile!
