750ml bottle: pours a clear pale champagne golden with decent legs. Has a subtle light honey nose with a touch of floral character. Starts with average fullness and a dry floral honey flavor before a muted finish. Could use some more body and complexity.

pours a clear pale yellow color with a bit of fizz. small white cap. smell is of pilsner esters mixed with honey. some waxiness and champagne esters. flavor has a lot of yeast pilsner like esters. very weird it smells more like a beer than mead. though there is a noticeable waxy honey taste overall dry with an oily finish. mouthfeel is light with a touch of fizz. overall i donít enjoy this very much. Bellís, give kuhnhenn a call and find out how to make mead.

UPDATED: MAR 3, 2012 750 ml bottle from Bellís. This is a sparkling mead, straw/pale gold in color. Aroma is clover honey and slight alcohol. It reminds me of a very dry white wine or a champagne. Taste is not as sweet or honey-like as nose suggests. It has a bit of tartness and a dry finish. It doesnít do a whole lot on the palate. I feel like this is a more commemorative effort from Bellís and I will certainly hang onto the bottle, but at $19 it was kind of a bummer. Not as enjoyable as I was hoping. Since Bellís is so good with hops, maybe next round they should try a dry-hopped mead rather than going such a traditional route. Step up the alcohol, get some legs in there, cut out the carbonation...I would try that.
Update: I had to add an extra point because at the bottom of the bottle I found the tiniest baby bee. I mean, how cool is that? We should all be so lucky to be preserved in alcohol!

tap at bells...one of the worst meads i have ever had. clear straw body...minimal honey and sugar in the nose and mouth. overly thin, weak, and intensely watered down. a huge miss

Draft list at bells says 10.3%. My first mead. beautiful yellow brilliantly clear pour from a snifter. ArOma is fresh honey, wax, light fruits. Mildly sweet taste and sweetness finishes the taste but not cloying and fruity. nice, pleasant. but my first. Very glad to try.

On tap at Bellís Eccentric Cafe in Kalamazoo, MI. Appearance cider like, bright yellow with no head. Aroma of nothing really, maybe sugar if anything. Taste blander than cider, definitely alcoholic, pretty sweet, almost like Boones Farm in my opinion. I donít think this should be considered mead, its way too sugary and has no honey profile at all. If I tried to finish I couldnít drive. Definitely wouldnít drink again, intrigued at first but definitely disappointed.

Tap at Bellís. Pale straw coloured golden pour. Tastes like honey and a light minerally clean character. Itís nice, although quite generic. A simple, sparkling mead.

Sample at The Eccentric Cafe. Poured clear pale color with good legs and virtually no head. Moderate dark honey aroma. Light to medium body with a thin texture. Light to medium honey sweet flavor with a medium sweet finish of moderate duration. Soft drinkable mead.

On tap at the Eccentric Cafe in Kalamazoo. This the first mead Iíve rated, but have had enough of the style to feel comfortable rating at this point. Overall, this was a pretty basic mead that was highly drinkable but with nothing really special going on. Perhaps even the most drinkable 10 abv bit of alcohol Iíve ever had. As expected, zero head and an oily, crystal, hazy gold body. Aroma consists of a pleasant sweet honey with cream, and a light tart berry wafer. The palate is is crisp and clean, almost water with only a hint of kick behind it. Some very simple notes in the flavor as well. Honey of course, with light grain cookie, apples, and some other light juicy fruits. In the end, a nice, simple, easy drinking high abv drink.
