Commercial Description:
Bell’s Wheat Project (2005) is an experimental foray into the development of complex flavors in beer. The Project comprises five new ales, four in series and one specialty strong product. The first four, Wheat 2, Wheat 4, Wheat 6 and Wheat eight are all made using 55% Wheat (either wholly or mostly malted) and 45% Barley malt. The barley malt makeup is exactly the same in each of the four and consists of three different malts. The total amount of grain in each of the four is also exactly the same, so each of them should have a virtually identical original gravity. The type and amount of hops in each of the four is exactly the same. And the processing through the brewhouse and fermentation is also exactly the same. The changing factors between the ales are the composition of the 55% of wheat used and the type and number of yeast strains used. In Wheat 2 the 55% of wheat is made up of two different kinds of wheat malt, and this ale is made with two different yeasts. Wheat 4 is made with four different wheats and four yeasts. Wheat six and eight made with six and eight wheats and yeasts respectively. The final product, Bell’s Wheat Love Ale, is made with the eight yeasts of Wheat eight and is a strong, but relatively light colored, “wheatwine.” 2. Basic Content List for the Wheat Series Wheat Two Wheats: White, Dark Yeast: Bell’s house ale strain, WLP410 Belgian Wit II Wheat Four Wheats: White, Victory, Toasted sprouts, Torrefied Yeast: WLP550 Belgian, WLP570 Golden, Wheat Two blend Wheat Six Wheats: White, Dark, Toasted sprouts, Torrefied, Red, Caramel Yeast: WLP500 Trappist, WLP530 Abbey, Wheat Four blend Wheat Eight Wheats: White, Dark, Victory, Toasted sprouts, Torrefied, Red, Caramel, Chocolate Yeast: WLP4000 Belgian Wit I, WLP565 Saison, Wheat Six blend

12 oz. bottle, thanks to OhioDad for this interesting beer. Pours a cloudy orangey-amber with a moderate off-white head. Aroma is wheaty with apricot, yeast, honey, citrus, spice and alcohol all detectable. Sweet fruity and bready flavors, featuring orange, fruity yeasts and spice- like a sweet breakfast bread, wild flowers and a bit of noticible alcohol as well. Full cody and medium carbonation round this one out. Nice treat!

ABV well concealed, interesting, and good to see Bells getting outside their comfort level and brew something out of their ordinary.

Bottled at Akkurat, Stockholm. Clear amber, average head. Estery aroma of raspberry candy and mashed banana. Sweet with dense, compact mouthfeel. With it’s estery candy banana flavours zipped together with salt it strikes me as an imperial weizen with all the flavours of a hefeweizen concentrated, sacrificing the refreshing functions of the weizen on the altar of Flavour. I like it - I think... At least on a dreary night in mid-November at 60 degrees north. Cheers to experimental brewers!

bottle in trade, thanks to MoeJuck. bright golden yellow hazy color, tall pillowy light tan head. aroma is honey-wheat malt, a little lemony. flavor is dry and yeasty with a lot of hop bitterness in the finish and aftertaste. sweet malt and persimmony flavor is barely at the back of the palate because this is overpowered by the yeast and hops. aroma is better than the flavor.

Bottle. A cloudy apricot color with a white head. More highly spiced than the others in this series with ginger, orange peel, pepper, clove and coriander. Oily and rich. Rating from notes.

Bottled at Akkurat, Stockholm. Hazy amber, topped with a rich white foam. Sweet estery aroma of banana, oranges and cloves with touches of wet grass and yeast. Full, sweet and fruity flavour cloves, banana and dryish orange-peels. Notes of mild spices, roses and wet grass. Finishes fruity and sweet of oranges and mango with some funny dryish peppery, grassy and yeasty undertones. Great.

Bottle - my first "wheat wine". Bold, orange pour with lots of wheaty-yeasty floaties. Rich wheat-fruit aroma. Smooth, wheat taste mixed with a good barleywine flavor. I liked this one more than I thought I would. Very different,, but nice and strong. Will have to try a few more...............

bottle. Aroma: Strong wheat aroma with a slight sour note that reminds me of oranges. Bread dough with strong yeast component. Some sweet malt with a toasty and caramel profile behind that. Some slight banana and clove. Appearance: Dark golden bordering on orange and hazy. Some floaties spotted. Head was off-white, thin, and fleeting. Not much lacing. Flavor: Apples and pears. Bananas and cloves. Sweet maltiness with caramel. Wheat bread. Orange-y citrus. Light floral right into the finish. Alcohol is quite noticeable, but doesn’t overpower. Palate: Medium-high bodied. Medium-high carbonation. Alcohol warming in back of the mouth. Overall: A nice alternative to your everyday barleywine. Nice wheat characteristics, but with a good alcohol punch near the end. Good stuff.
