Commercial Description:
Bell’s Wheat Project (2005) is an experimental foray into the development of complex flavors in beer. The Project comprises five new ales, four in series and one specialty strong product. The first four, Wheat 2, Wheat 4, Wheat 6 and Wheat eight are all made using 55% Wheat (either wholly or mostly malted) and 45% Barley malt. The barley malt makeup is exactly the same in each of the four and consists of three different malts. The total amount of grain in each of the four is also exactly the same, so each of them should have a virtually identical original gravity. The type and amount of hops in each of the four is exactly the same. And the processing through the brewhouse and fermentation is also exactly the same. The changing factors between the ales are the composition of the 55% of wheat used and the type and number of yeast strains used. In Wheat 2 the 55% of wheat is made up of two different kinds of wheat malt, and this ale is made with two different yeasts. Wheat 4 is made with four different wheats and four yeasts. Wheat six and eight made with six and eight wheats and yeasts respectively. The final product, Bell’s Wheat Love Ale, is made with the eight yeasts of Wheat eight and is a strong, but relatively light colored, “wheatwine.” 2. Yellow-gold. Nose was yeasty, orangey and lightly spiced. Bold texture with a spritzy carbonation. Sweet grains and milky cereal. Flowery, spicy hops. Balanced bitterness. Enjoyable beer.

pours clear amber color with a small white head. Mildy spicy aroma with a little hint of almost lamic like sourness. Flavor is very similar to the aroma with a note of belgian yeast fruitiness and sweetness. Creamy medium body.

Thanks to Walt for this beer. Poured a hazy dark amber/copper with a semi-fizzy off-white head. Sweet aroma of black cherries, cinnamon, apple cider, and honey wheat bread. Flavor is rich and wheaty, with notes of honey wheat and rye bread, and grapes. It starts out fairly sweet but ends with a bit of an acidic kick that sits in the back of your mouth. Finish is warm and dry. A little on the thin side. May not be deep or thick enoguh to be truly outstanding, but is a very nice beer.

Pours straw yellow with a patchy white head. Aroma is fruity yeast (dough), corriander, flowers, malt (straw) and fruit (peach, apple, apricot). Wheat and malt flavor, medium sweetness and acidity, bitter floral hops, fruity and alcohol finish. Medium bodied and warm, fizzy palate.

Bottled. Beer is a hazy, medium orange-gold color with a small, white, frothy, mostly and rapidly diminishing head. The aroma is sweet, citrusy and heady: Malty with moderate notes of toasted grain, warm wheat toast, light note of caramel; Hoppy with moderate-to-heavy notes of lemon, honeysuckle; Yeasty with light notes of basement; Moderate miscellaneous note of alcohol, light notes of candy sugar, coriander. The flavor is moderately sweet, lightly bitter, lightly astringent with a lightly bittersweet, slightly warm finish. The body is medium, the texture is velvety and the carbonation is lively.

Head is initially small, frothy, off white, mostly diminishing. Body is hazy light amber, bottle conditioned. Aroma is lightly malty (toasted grain), lightly to moderately yeasty (cobwebs), with notes of clove, hint of butter. Flavor is moderately sweet, lightly acidic, lightly bitter. Finish is lightly sweet, lightly acidic, lightly to moderately bitter. Medium body, watery texture, lively carbonation.

Bottle. Thin white head, body is a light orange, mostly clear. Light aroma of lemon, grass. Taste is spicy, clove. Balanced mild sweetness. Earthy, leafy hops. Finish is light and sweet, short. Balanced, but not outgoing.

Bottle shared with jerc - his bottle. Hazy light orange with a wispy head. Aroma of yeast and pineapple - lots and lots of pineapple. More pineapple in the flavour, with a growing hop bitterness in the finish. Did I mention the pineapple?
