Commercial Description:
Bell’s Wheat Project (2005) is an experimental foray into the development of complex flavors in beer. The Project comprises five new ales, four in series and one specialty strong product. The first four, Wheat 2, Wheat 4, Wheat 6 and Wheat eight are all made using 55% Wheat (either wholly or mostly malted) and 45% Barley malt. The barley malt makeup is exactly the same in each of the four and consists of three different malts. The total amount of grain in each of the four is also exactly the same, so each of them should have a virtually identical original gravity. The type and amount of hops in each of the four is exactly the same. And the processing through the brewhouse and fermentation is also exactly the same. The changing factors between the ales are the composition of the 55% of wheat used and the type and number of yeast strains used. In Wheat 2 the 55% of wheat is made up of two different kinds of wheat malt, and this ale is made with two different yeasts. Wheat 4 is made with four different wheats and four yeasts. Wheat six and eight made with six and eight wheats and yeasts respectively. The final product, Bell’s Wheat Love Ale, is made with the eight yeasts of Wheat eight and is a strong, but relatively light colored, “wheatwine.” 2. Thanks to Walt for this beer. Poured a hazy dark amber/copper with a semi-fizzy off-white head. Sweet aroma of black cherries, cinnamon, apple cider, and honey wheat bread. Flavor is rich and wheaty, with notes of honey wheat and rye bread, and grapes. It starts out fairly sweet but ends with a bit of an acidic kick that sits in the back of your mouth. Finish is warm and dry. A little on the thin side. May not be deep or thick enoguh to be truly outstanding, but is a very nice beer.

12 oz. bottle courtesy of Hellomynameis pours a hazy gold with a medium off white head that settles to a thin white layer perisisting to the end of the glass. Aroma of toffee, clove, some faint alcohol, and yeast. Palate is smooth but with a lively effervescence, and a pretty clean aftertaste. There’s some definite acidity and a slight sourness that seems to dominate the flavor, not unexpected considering the large wheat bill. Slight bitterness noted at the finish, although the hops are definitely a distant background feature here. I actually ennjoyed the rather unusual combination of aromas and flavors that this beer offers. If nothing else, it’s interesting.

Batch 7155 - Thanks BBB63! Pours translucent orange with a frothy off white head...aroma is banana and herbs, lemon peel, sticky caramel and rough grain...flavour is thick in the mouth but light overall, sweet fruit and honey, yeast, dirt, spice...lightly tart on the finish with a lingering earthiness (soil)...very interesting...

Pours a dark amber/light copper on the pour. Heavy carbonation with a small fading lacing head. Aroma is of alcohol, yeast, spice and apple. Taste has notes of apple, yeast, clove, honey and a slight dryness on the finish. Interesting....

Grassy wheat aroma with a nice sweet sugary citrus backing. A slight hint of caramel as well. Flavor is more of the sweeter side, light citrus and coriander notes coming through with a bubbly sugar taste sweetness. Palate is quite smooth, it has some initial grainy feel to it, but smooths out from the sugars mixing with the alcohol.

bottle in trade, thanks to MoeJuck. bright golden yellow hazy color, tall pillowy light tan head. aroma is honey-wheat malt, a little lemony. flavor is dry and yeasty with a lot of hop bitterness in the finish and aftertaste. sweet malt and persimmony flavor is barely at the back of the palate because this is overpowered by the yeast and hops. aroma is better than the flavor.

Pours a cloudy amber with a small beige heady. Aroma is sweet candi sugar, clove, banana, coriander and mango. Flavor is medium sweet, banana, candi sugar and some clove. Very small alcohol flavor. Light to medium bodied, finishes dry and "wheaty".

bottle at Farren’s in Champaign, IL poured a hazy gold peachy color with a small off-white head. very sweet grain aroma. flavor was sweet citrus, grain and some alcohol. full bodied and sticky on the lips. nicely done
