Commercial Description:
This beer is the first in Bell’s Wheat Project. Project comprises five new ales, four in series and one specialty strong product. The first four, Wheat 2, Wheat 4, Wheat 6 and Wheat eight are all made using 55% Wheat (either wholly or mostly malted) and 45% Barley malt. The barley malt makeup is exactly the same in each of the four and consists of three different malts. The total amount of grain in each of the four is also exactly the same, so each of them should have a virtually identical original gravity. The type and amount of hops in each of the four is exactly the same. And the processing through the brewhouse and fermentation is also exactly the same. The changing factors between the ales are the composition of the 55% of wheat used and the type and number of yeast strains used. In Wheat 2 the 55% of wheat is made up of two different kinds of wheat malt, and this ale is made with two different yeasts. Pour is deep golden hazy with a thin white head...big yeasty chunks...smell is smell has some apple cider, spicey notes to it...also very musty and yeasty...very chewy mouthfeel...strong malt notes throughout but yeast is dominating...very wit-ish...hops come out in the finish, as bitterness takes over...

Honey blonde pour. Aroma is apple juice, with some yeasty funk underneath. The body is thin and drinkable, with the great use of yeast really stealing the show. Vanilla, honey, sugar cookie, doughy malts and banana are wrapped in that classic, earthy funk. Smooth and palatable. Kind of like a wit-lite, I could see drinking a few of these (something I can rarely say about Belgians).

12 oz bottle (batch 7083), 2005, from Bello Vino in Ann Arbor, MI (Dec 2005), served at cellar temperature in an Allagash glass. At first quite clear amber-gold, with a huge frothy lasting white head....the yeast shot really clouds things up with massive floaties and swirling clouds of fine organisms.....initially faint but very fresh and inviting banana/bubblegum aroma with touches of sourdough batter and blackberries, grassy dry hops and light subtle spicing (cumin, anise)....grows in power with a few minutes of work.....body is initially quite sour, with a light maple-vanilla sweetness entering shortly only to be overcome by significant doughy sour malts, heavy yeasty thickness on the tongue with low carbonation adds to the potency....peppery, tingly and surprisingly rather bitter at the finish along with neverending sourness, almost to the point of vinegar momentarily. Faint citrus qualities. Certainly not your everyday run-of-the-mill American wheat, this is most definitely a beer to savor and work with to get at its subtleties and secrets. Excellent.

(12 oz bottles: Obtained 11-Nov-05 in trade with Sully and 21-Feb-06 in trade with Pailhead, thanks Mike and Kevin!) Hmm, not at all what I was expecting because this actually has a nice flavor, and a lot of it too. Flavors of sweet, lightly-bready wheat malts, a fair amount of spice, yeast, some mild banana, and mild phenols, but also a bit of a bitter hops kick toward the finish. Wheat, spice, mild banana and light hops in the nose, but it’s also fairly phenolic as well, and it’s more noticeable in the nose than the flavor. As time goes on, the phenols fade and the hops picks up the slack, so the additional breathing time helps the nose evolve into something more pleasant. Medium body is quite nice for the style, but despite the claims, I think Two has a lighter body than the others in the series. Carbonation is light to moderate while the others are over-carbonated. Dark golden-orange in color and very cloudy, with flakes of sediment precipitating out of the beer. Small, whitish head fizzes away quickly, leaving only a thin ring and a single small patch of lace. Pretty nice overall, and the most straight-forward of the series, which in a way makes it less interesting, but I think I may like the flavor of this beer better than Four or Six.

Bottle. Pours a cloudy yellow with a very nice whitish head. Nose is muted scents of citrus and bread. Flavor is lemons mixed with sweetness with some funky barnyard. Viscous, kind of like a cross between a hefeweizen and a wit. Much creamier than the other thin American Wheats I have had. Pretty nice brew. Thanks to Styles for the bottle.

You smell the citrus right away -- definietly an orange smell to it. Unfiltered cloudy appearance with a nice nead at first that dissipates to a white film. Lots of floaters floating around in it. Sweet, refreshing, full smooth mouthfeel. Good summer beer -- better than Oberon, in my opinion. Not a long finish, but it lingers for a bit. The attack is sweet, but after the initial sweetness you get the malty smoothness.
