The body is thin and drinkable, with the great use of yeast really stealing the show. Vanilla, honey, sugar cookie, doughy malts and banana are wrapped in that classic, earthy funk. At first quite clear amber-gold, with a huge frothy lasting white head....the yeast shot really clouds things up with massive floaties and swirling clouds of fine organisms.....initially faint but very fresh and inviting banana/bubblegum aroma with touches of sourdough batter and blackberries, grassy dry hops and light subtle spicing (cumin, anise)....grows in power with a few minutes of work.....body is initially quite sour, with a light maple-vanilla sweetness entering shortly only to be overcome by significant doughy sour malts, heavy yeasty thickness on the tongue with low carbonation adds to the potency....peppery, tingly and surprisingly rather bitter at the finish along with neverending sourness, almost to the point of vinegar momentarily. Faint citrus qualities. Certainly not your everyday run-of-the-mill American wheat, this is most definitely a beer to savor and work with to get at its subtleties and secrets. Excellent. Hmm, not at all what I was expecting because this actually has a nice flavor, and a lot of it too. Flavors of sweet, lightly-bready wheat malts, a fair amount of spice, yeast, some mild banana, and mild phenols, but also a bit of a bitter hops kick toward the finish. Wheat, spice, mild banana and light hops in the nose, but it’s also fairly phenolic as well, and it’s more noticeable in the nose than the flavor. As time goes on, the phenols fade and the hops picks up the slack, so the additional breathing time helps the nose evolve into something more pleasant. Medium body is quite nice for the style, but despite the claims, I think Two has a lighter body than the others in the series. Carbonation is light to moderate while the others are over-carbonated. Dark golden-orange in color and very cloudy, with flakes of sediment precipitating out of the beer. Small, whitish head fizzes away quickly, leaving only a thin ring and a single small patch of lace. Pretty nice overall, and the most straight-forward of the series, which in a way makes it less interesting, but I think I may like the flavor of this beer better than Four or Six. Nose is muted scents of citrus and bread. Flavor is lemons mixed with sweetness with some funky barnyard. Viscous, kind of like a cross between a hefeweizen and a wit. Unfiltered cloudy appearance with a nice nead at first that dissipates to a white film. Lots of floaters floating around in it. Sweet, refreshing, full smooth mouthfeel. Good summer beer -- better than Oberon, in my opinion. Not a long finish, but it lingers for a bit.
