Brut; 6.9% alcohol; sparkling, champagne-style blend of English and French traditional cider apples; complex acid and tannin; secondary fermentation in the bottle produces a deliciously Brut, finely carbonated beverage; bottled on the lees.

2.8 AROMA 6/10 APPEARANCE 2/5 TASTE 6/10 PALATE 2/5 OVERALL 12/20
Sampled at the New Amsterdam Market Cider Revival.
Dusty, faded yellow color. Quick splash of suds.
Smells a bit briney, w/ lots of acidy skin. Yeasty, w/ an odd stuffiness.
Taste is skin, spent yeast, & chalky flesh. Strong acid. Faintly veggie.
Lightly tart, pithy finish. Itchy feel & forced carbonation.
Not a fan of these guys. Inoffensive, but they all seem watered down or just plain old.

3.8 AROMA 8/10 APPEARANCE 3/5 TASTE 8/10 PALATE 3/5 OVERALL 16/20
750mL Bottle, poured at CiderDays 2012. Electric spice and leather. A real musky black cardamon-like sensation. Very funky throughout. The bitterness of the apples is interesting and punches out the finish nicely. Waxy mid-palate. Nice bubbles.

Bottle. Clear amber body with nice head. I thought this was the best of the Bellwehter Ciders. Surprisingly a little complex on the palate. Slightly dry with a nice tartness to it.
