Carefully hand crafted cider made with fresh Liberty Spy apples. Crisp sparkling and refreshing flavor.

Sampled at the New Amsterdam Market Cider Revival.
Dusty, yellowed, white wine body.
Smell is surpisingly flowery, tart, & honeyish.
Taste is mildly tangy apple wine & waxy skin. Signifigantly yeasty, with a sugary finish.
Mild carbonation & alcohol. Low sulfites. Not quite thin.
Though not quite showcasing my favorite apple, it’s better then several of their other bottles.

Bottle shared with Linh at Peekskill Brewery. Pours a light, clear golden body with no head, very minimal bubbles clinging to the side of my glass. Aroma is crisp apple skins and perfume. Mouthfeel is medium to thin and very crisp, notes of apple skins, juice and perfume. Nice cider overall.

Pours copper/straw with some fizzy bubbles. Smells of sweet apples, some underlying honeydew. Tastes sweet and syrupy with some tarte dryness on the finish.

Bottle. Aroma has a very tart apple smell. Taste is sugary, sweet, very tart. almost too tart at times.

One of the more tart versions Bellwether makes. Firm acidity and a bit of tannic astringency makes for a crisp beverage.

Pours fizzy, straw colored liquid. Some sulfur on th e first sip, but that goes away. Drier than most American ciders, but it’s sweeter than the Europen versions. Overall, a very approacable cider.
