COMMERCIAL DESCRIPTION
This imperial stout is aged with tart cherries in second use cognac barrels (after Bring Out Your Dead comes out) for 3 months. Cognac contribution is very minimal (intentionally). The resulting elixir showcases a delicious blend of roasted malts, bitter chocolate, coffee and tart cherry. Really F*&#$*!-ing good.

Big rich nose with cherries. Thick black appearance with nice brown small bubbles head. Heavy rich flavour of cognac and fruit with malt sweetness. Finish turns chocolate and dryness slowly takes over. Exceptional rich offering.

Deep brown, short head. Malty aroma, no real sign of cherry, but the cherr y absolutely bursts when you drink it, like a cherry pie. Barrel aged beautifully wtih so oak and a port like flavour. Really great.

2014-05-19. Black body with a small tan head is a touch oily. 3++ Aroma is an interesting melange of cherry, alcohol and dark malt, hints at cocoa dark fruit. 7++ Flavour is rich, dark malt core, lightly tangy cherry character lingers, light cocoa. Smooth medium to full bodied palate, soft carbonation. 3++ Pretty nice, rich. Just a touch more cherry than my preference. Pairs rather nicely with Mast Brothers Sea Salt chocolate. Bottle shared by pfriesen.

Bouteille 500ml, gracieuseté de wilco. Thanks Mike! Couleur noire opaque, mousse moka foncée fugace. Arôme de cerise, alcool, malt torréfié, boisé, fumée léger, chocolat noir, cognac subtil. Goût de chocolat noir, malt torréfié, soupçon de cerise noire, alcool, légère acidité, boisé en fin de bouche. Carbonatation moyenne, corps moyen-dense, huileuse.

Bottle. Dark brown black pour with minimal head. Aroma is straightforward chocolate and cherry. Taste is sweet and bitter chocolate along with cherry tartness. Texture is a little too light for the style. Still enjoyable, but I’m not sure it is a nice blend of flavors.

My Bottom Line:
Cherry fruitiness and acidity bursts from dark chocolate malt flavors in this balanced and creative dessert brew.

Further Personal Perceptions:
-A veil of foam slowly dips into the darkness.
-Aftertaste is quite roasty and bitter, with lingering cherry tartness.
-Carbonation is a bit low.
-If you like Funky Buddha’s dessert brews, you will like this a lot. And vice versa. ;)

500 mL bottle at the brewery, served in a stem glass. Pours black with a small tan head that fades to a thin rim and leaves no lace. The nose has notes of cherry, licorice, molasses, tobacco and roast malts. The flavour is moderately sweet with big cherries, chocolate and molasses, along with slight tobacco, espresso and a touch of oak. The finish is long, with cherries and chocolate. On the palate it is full in body with a smooth, creamy texture and soft carbonation. Overall, a very nice cherry imperial stout with chocolate and oaky notes. The cherries are present in just the right proportion and complement nicely. 2014-04-08

Bottle 500ml. Pours black with low brown head. Some lacing. Aroma is of chocolate, alcohol, fruits. Taste is of chocolate, alcohol, nuts, good bitterness, fruits. Palate: Full bodied. Low carbonation. Overall: Not a big fan of this exact style of IS (fruity, european-style). Good, and not bad at all, but this is not awesome stuff to me.
