COMMERCIAL DESCRIPTION
A brett barrel aged tripel with fruit addition (plums). Barrels include second and third use french oak barrels (wine) from Norm Hardie and Tawse with multiple strains of brett and other bugs. Barrel flavour and aroma contribution is predominantly from brett and other bugs + oak. 2012 Version was aged 5 months prior to bottle conditioning. 2014 version was aged 16 months in barrel and with plums for additional 4 months prior to bottle conditioning. 2014 version released on draft Nov 2014. Bottles will be released Dec 2014. Yeast: Trappist
Hop: Hallertau
Malt: Pilsner, Abbey, Wheat, Oats

650ml bottle from the brewery. Served in a trappist glass. Pours transparent orange-brown, small white head, medium visible carbonation. Aroma: Grapes, plums, lemon, banana, cinnamon, cloves. Super fruity. Palate: Medium bodied, syrupy, smooth, fairly fizzy, tart finish. Taste: Very sweet, slightly dry finish. Hints of sourness throughout, getting strong in the end. Really well balanced. Not super dry like most tripels, and the sourness is quite pleasant but not overpowering.

500mL bottle, sent from wilco (thanks a lot, Mike), pours a cloudy golden orange with a small white head. Nose brings out massive plums upfront, with medium brett and some candied fruit underneath. Flavour is quite complex, with lots of vinous oak notes upfront, followed by peaches, and medium brett funk. Pretty fruity, vinous and oaky. Fairly alcoholic, but not too boozy. Excellent.

On tap at the brewpub. Clear golden with a thin foamy white head. Flavors are honey, plums, cherries, lemon, pear, grapes, apricot, oak, sweet malts, vanilla and and leather with spicy and funky notes. Medium body, soft carbonation oily texture. Beautiful.

My Bottom Line:
Plums, white grapes and citrus fruit wrap themselves around eloquent cereals, while wood and brettanomyces greenness add complexity to an already compelling Wild Tripel.

Further Personal Perceptions:
-A veil of foam coats the blond mist.
-The mouthfeel is dry and soft. Drinkability is sky high for such a potent brew.
-As for most Bellwoods creations, the rendering and flavor display are classy and balanced.
-Brettanomyces adds character but doesn’t take over, which I appreciate.
-Can’t wait to try this bottled!

2014 500ml bottle. Pours a slightly hazy golden orange with a half finger, white head. Aroma has acidic, tart notes with hints of candy sugar, vanilla, and hints of fruit. Taste is semi tart but not as acidic as I thought it would be. Vanilla, tart fruits, bubble gum, candy sugar, Belgian yeast, a touch of spice, and a drawn out aftertaste. Medium body with a medium high carbonation. Clean in the mouth with a lively carbonation and dry finish. Overall a very complex brew. Oak, vanilla, candy sugar, bubble gum, tart fruits, and a big, dry finish.

Bouteille 500ml, gracieuseté d’AlexGenois, merci Alex! Couleur orangé pâle trouble, mousse blanc cassé crémeuse laissant une belle dentelle. Arôme de Brett, prune, un peu terreux, gâteau des anges, légèrement vanillé. Goût de malt, boisé, bonne présence des bretts, sucré, alcool habilement camouflé, légère acidité en fin de bouche, prune en arrière-goût. Carbonatation moyenne-élevée, corps moyen.

Bouteille 50cl de et partagée avec Pierre T. Bottle count 1704, no BB date. Dorée présentant un léger trouble, col blanc voire blanc-cassé crémeux et épais. Arôme met d’office le point sur les bretts qui sont bien là. Le tout est accompagné par un léger rétro-nasal rappelant presque un Chardonnay. La prune arrive en toute fin et sans être marquée sur l’étiquette aurait facilement été oubliée. De ce point de vue, je trouve très peu en terme de caractère de triple. Palais est agréable quoique un peu relevé au niveau des 11%. Le point négatif de cette bière réside dans le brett qui est quasi la même souche constamment revue et qui commence à devenir trop redondante. De mon côté je ne trouve rien de nouveau. Bière solide certes, mais ça s’arrête là. Note aussi un léger fini qui peut se rapprocher d’un boisé de Chardonnay et dont le caractère initial de la bière - les prunes - se retrouvent noyées dans la masse et surtout trop en retrait par rapport aux brett. Petite épaisseur de bouche venant de l’avoine, peu en terme de développement des houblons, ici un houblon pourtant très noble et neutre.

500ml bottle shared with scottatron. Hazed pinkish golden. Nice funky fruity triple. Drinks way lighter then the 11%. The fruit comes through but as a whole I think this one could age longer.

Smells amazing, bretty, funky, fruity with some belgian yeast. Hazy yellow. Tastes nice, upfront bretty funk, followed by woody/astringent notes and sweetness, belgian yeast/cloves and a light sweetness/hoppyness. Alcohol well hidden. Medium bodied and average carbonation. Yellow plums not overly evident, may contribute to the tang this one punches. Quite nice, not not completely put together/possibly could use some aging.

Tripels are hard to drink. This is not hard to drink. Thus, this is not a triple. Hazy straw-orange body, medium sized white head, spotty lacing. Light plum, musty barn, soft grains, wet hay, light lacto, soft bready yeasts. Tilquin Quetsche meets something like a good natch of Fantome. Medium bodied with moderate carbonation, lively acidity, finish lingers a bit with just a touch of sweetness.
