COMMERCIAL DESCRIPTION
All Brett APA. Pilot (2013) was a wheat-APA malt bill fermented exclusively with Brett Trois to 6.6% ABV. Second and current version is an APA fermented exclusively with Brett Lambicus to 5% ABV. For raters who do not know (and to head off any confusion), Brett behaves very differently, and produces a totally different flavour/aroma profile when used as a primary yeast, as opposed to when used in a more typical long secondary fermentation.

April 6, 2014. 500mL bottle from bottle shop. Pale golden yellow, bit foggy. Faint peach and hop aroma. More balanced taste-wise than expected, though still a bit too hoppy for my tastes. Touch of lingering sourness.

Un nez plus près de l’hefeweizen, banane, gomme baloune, céréales pales. Le liquide est mince et sec avec des élans fruités qui découlent de houblons principalement. Le côté brett est vraiment juste complémentaire, rien de particulièrement excitant....Surtout après avoir ouvert une Femme Fatale.

500 ml bottle from the brewery. Pours a pale hazy yellow with white head. Smells hoppy, orange and lemons, funk, reminds me of the Monogamy Mosaic beer. Tastes juicy, yeasty, earthy, really refreshing and tasty beer.

Thanks to nick for this. Pours cloudy light gold with a small white top. Aroma is straw grains with floral and brett. Taste is saison like, dry palate, light grains and wheat. But then there is the floral hop bitterness and flavouring that adds. Interesting and refreshing.

500 mL bottle from the brewery, served in a branded stem glass. Pours hazy pale straw with a small white head that fades quickly to a thin rim of bubbles, leaving behind a small amount of fine lace. The nose has notes of lemongrass, citrus rind, pear, earthy spices and flowers. The flavour is mostly dry with grains, a touch of malty sweetness and just a hint of tartness. Spicy notes build from the middle to the finish and contribute to a dry, spicy finish with a touch of grapefruit bitterness. On the palate, it is light in body with a watery texture and soft carbonation. Overall, an interesting all-Brettanomyces pale ale. I didn’t know what to expect, but it came out much more saison-like than I was expecting. 2014-03-27

500 ml bottle from brewery retail store. Pours a cloudy, pale golden yellow with average-sized white head. Aroma has lemon, sweet tropical fruit, flowers and a little funk. Flavour has big floral note, definite tropical fruitiness, lemon that stands out and a mild funkiness. Light-medium body. Rather nice.

On tap at Bar Hop (Toronto). Pale yellow with an off white head. Learnt something new reading the description as I was confused when drinking this as it was not bretty but now I understand - more IPA with a nice lemon zest, mango, and pineapple aroma, moderate carbonation and mild+ body, somewhat dry on the finish, really liked the mouthfeel but not sure about the beer overall.

2014-03-08. Crisp golden body with a small white head. 3+ Aroma is vaguely floral and funky, touch of lemon. Flavour is similar, sort of floral, kind of bitter throughout. Almost sort of saison like spice accents. Average bodied palate, light carbonation. I liked it, and it is super interesting but I am undecided as to whether or not I want more than a glass of it. On tap at Bellwoods. Pours a pale gold with a one and a half finger, whore head. Aroma has notes of farmhouse funk, bubblegum, candy sugar, and mild citrus. Taste is a slightly sour/tart fruity. Doesn’t carry the sweetness of the aroma. Medium body and carbonation. Light and refreshing in the mouth without being overly watery. Overall a very refreshing drink. Would be great in the summer. Would get again.
