All Brett APA. Pilot (2013) was a wheat-APA malt bill fermented exclusively with Brett Trois to 6.6% ABV. Second and current version is an APA fermented exclusively with Brett Lambicus to 5% ABV. For raters who do not know (and to head off any confusion), Brett behaves very differently, and produces a totally different flavour/aroma profile when used as a primary yeast, as opposed to when used in a more typical long secondary fermentation.

Bottle - Lots of funky stone fruit with light grassy citrus. Hazy yellow gold with a thin white head. Funky apricot and fruit with some sweet candy citrus. Easy drinking and very nice.

Bottle sample at a tasting at our place. Thanks Ariel. Hazy blond. A little bretty and lots of pine/ evergreen hops. Hoppy bitterness with a little funk in the mouth, soft carbonation, medium body and soft, hoppy aftertaste.

500ml bottle. Hazy yellow pour, large white head. Tart aroma, loads of lemon, some wheat and some white wine notes. This is quite interesting, some light mango, stone fruit, even some pineapple, these tropical fruit are quite interesting with this wheaty, yeasty, tartness. Odd, but intriguing. I like it!

Bottle 500ml. Pours hazy blond with low-medium white head. Some lacing. Aroma is of fruits, phenols, perfume. Taste is of slight acidity, fruits, phenols, garbage, yeast is not 100% on I think. Palate: Light body. Soft carbonation. Overall: Original. Good, but I don’t really dig this yeast action.

bottle shared by mathueuc, thanks bro. pours hazy pale yellow greyish with a small white cap showing minimal retention and lacing. spicy yeasty esters more than fruity, lot of pepper, ew citrusy and tropical notes, bit of perfume and some off-phenols, bitter herbs. average carbonation, light body - watery, dry herbal-grassy-spicy finish. average belgian ale at best.

UPDATED: NOV 23, 2014 Bottle thanks to wilco. Pours a light golden with a small white head with good lacing power. Nose is a little off/weird with a lot of fruits, perfume, smoke and even menthol. Taste is lightly sweet which is odd for a brett beer but maybe all-brett beers are different. It is also a little bitter but not enough to keep balance I think. Flavors are fruity but also offer some awkward bubblegum. It still finishes pretty dry and body is medium as is carbonation. Overall a slight letdown, maybe it should have aged a little longer?

Bottle (500 ml). Shared by mathieuc, thanks! Slightly hazy bright golden with a small ring of white foam and little lacing. Aroma is quite yeasty with a strong herbal presence, smokey notes, light spiciness and perfume hops. Taste is also yeasty with herbal presence, spices and even a touch of alcohol, which is surprising for a 5% abv APA. Medium body. Moderate carbonation. Slightly oily mouthfeel. Somewhat dry finish. The weird spices/herbal mix hinder the drinkability. It’s not a bad beer, but definitely subpar for Bellwoods standards.

Bottle sample at a tasting at kerenmk’s place. Thanks Ariel. Hazy yellow with a white head. Great aroma with bread, yeast, a bit of sweat and lots of fruity hops. Sweetish flavor with grainy notes, yeast, nice fruity and slightly grassy hops and very mild bitterness in the finish. Medium-bodied. Refreshing.

Saturday night pour with Cuban cigar -- gift from student, perhaps a bribe even -- is Florida sunset yellow. It’s a beautiful pour, all cloudy & robust & rich colour. Smells like sparkling wine. This is a fantastic brew. I get a juicy citrus slap on the tongue, with a crisp white wine finish. An all around winner that I’m going to dedicate to my kitschy favourite (as in not really, wink wink) 80’s glam brettalhead Brett Michaels.
