2013 version was aged for 3 months in first use cognac barrels and released on April 6th 2013 to celebrate the 1st anniversary of Bellwoods. 2014 version was aged for 12 months in first use cognac barrels and released in Nov 2014. This will be annual release.

I wasn’t gonna drink this tonight but once I found out Season 7 of Walking Dead had started it was just such a perfect beer to crack and pair it with: Bellwoods Bring out Your Dead 2015 Vintage Imperial Stout Aged for 12 months in Cognac Barrels. Inky black with a rusty head that verged on purple but didn’t stick around. If the dead are coming you tend not to linger I guess. Awesomely intense aroma: Cacao, treacle, sweet berries & stonefruit from the cognac but the stout mellowed that out though there’s still some of that 13% boozy heat apparent. Body as thick as motor oil but with a somewhat sharp carbonation. The stout gives you coffee grounds, tobacco, coarse cooking chocolate then the cognac throws in some berry syrupy sweetness, heat and charred wood character. Am I drinking a beer aged in a coffin that was doused in cognac and charred to a crisp? Could be... awesome.

2015 bottle from trade with Jeffrey. Aroma: strong licorice, candied fruits, raisins, some barrel notes of wood and alcohol. App: black with a tiny burgundy tint, small brown head, not much retention. Taste and palate: medium to full body, lots of those candied fruits are back in mouth, liquoreux, alcohol and really subtle bitter finish. Overall: as soon as I poured it in my glass I could smell strong barrel notes but those faded away really fast and the candied fruits took the 1st place in this aroma which is kind of sad since I don’t appreciate that much in any kind of beer. It’s good, really good but not exactly the kind of aroma and taste I would have expected from an imperial stout aged on cognac barrels for 12 months. Reminds me more of a baltic porter than an imperial stout.

Draft at RB Best Fest 16: Poured a pitch black with brown head. Aroma is cognac boozy. Taste is boozy, cognac, coffee, super roasty malt.

2016/08/26 - Pours black with a soapy tan head that quickly reduces and leaves no lacing. Aroma is amazing. Milk chocolate, roasted cereal, heavy caramel, wood, burnt brown sugar, molasses, marshmallow and cognac. Taste is more milk chocolate, wood, brown sugar, molasses and heavy cognac. Mouthfeel is full and slightly oily with smooth carbonation and a long, drying slightly warming finish. ABV is apparent, but not distracting. Un fabuleux impérial stout que je dois avec toute ma reconnaissance à mon ami Nick. Cheers mate! De loin, ma bière préférée de cette brasserie et qui est, soit dit en passant, de loin supérieure à nombre de grands stouts américains vieillis. Je suis émerveillé. Le liquide qui coule dans mon verre est noir comme la nuit, sirupeux, épais et lourd. En tombant dans mon verre, je suis hypnotisé par cette mousse brune qui se forme en surface et qui se dissipe lentement en laissant de belles dentelles sur mon verre. Des arômes qui se manifestent à moi avec force. Des arômes de torréfaction, de café fort mais jamais de grains brûlés. Une torréfaction chaleureuse et légère mêlée à une réglisse, des épices, une cuillère mélasse, de la vanille et un caramel roux en cuisson. D?une complexité déconcertante et aussi chaleureuse qu?elle est équilibrée. Une texture des plus soyeuses en bouche alors que l?alcool réchauffe ma gorge pendant sa descente. Du caramel, une barrique réchauffée par le soleil, un alcool fortifié digne des grands chais de Cognac Français. Je plonge dans cette douceur vanillée tel les marins de l?odyssée soumis au chant des sirènes...

Bottle from ruddick. Many thanks! Dark brown/black colour, roasted malts, some fruitiness, lots of cognac. Very cognac-like beer. But well balanced. Good!

Brown bottle, 500 ml, 2015 vintage, via Billy Hamilton -CANBIF 2016 (thank you!), savoured on July 4 2016 eye: black, opaque, nice dark brown head that turns into a ring, slight lacing; nose: roasted malt, woody, cognac, molasses, brown sugar, slight burnt malt; mouth: roasted malt, woody, cognac, molasses, brown sugar, slight burnt malt, alcohol, alcohol warmth, light astringency, finale in molasses with light presence of cognac, full body, below-average carbonation, mildly sweet, lightly velvety and lightly silky texture; overall: quite likable FRANÇAIS Bouteille brune, 500 ml, millésime 2015, via Billy Hamilton - CANBIF 2016 (thank you!), savourée le 4 juillet 2016; œil : noire, opaque, belle mousse brun foncé qui se transforme en un anneau, très légère dentelle; nez : malt torréfié, boisé, cognac, mélasse, cassonade, très léger malt brûlé; bouche : malt torréfié, boisé, cognac, mélasse, cassonade, très léger malt brûlé, alcool, chaleur d’alcool, légère astringence, finale en mélasse avec légère présence de cognac, corsée, carbonatation sous la moyenne, moyennement sucrée, texture légèrement veloutée et légèrement soyeuse; en résumé : bien aimé

500ml bottle. 2015 13%. Pours a decne black, light tan head. Aroma is cognac, cocoa, sweet malt. This is not hugely boozy one of the better barrel aged beers ive come across in a while. This put me on my ass though at 13% for a 500ml. Wish it wouldn’t have but oh well.

On tap at RateBeer Best 2016. Pour is black with a very small off-white head. Aroma and flavor of chocolate malt, grape vines, wood, and booze. Finish is very boozy and bittersweet.
