500ml bottle courtesy of Sammy (828 of 1629) Robust aroma of dark roasted malts, roasted meat, prunes, cognac, and dark chocolate, with hints of vanilla. The taste is moderately bitter and complex. Roasted malts, chocolate, dark fruit, a touch of candied sweetness, with a bitter finish. The bitterness continues into the aftertaste and is accompanied with a wonderful cognac warmth. Full body and medium carbonation. Round, smooth mouthfeel. Overall, this is a winner! Excellant example of an Imperial Stout. Many thanks Sammy!

Tasted a small sample at a BeerThief gathering, thanks to groulxsome! Another extreme dark Bellwoods beer that stains the glass. Nice. Aroma is more cognac and it also smells very boozy. Nice! Feel is very thick and full. Taste is great: cognac but also roasty and molasses. Great beer!

500ml bottle. Super dark chocolate colour, slight brown around the edges, small milk chocolate head. Cognac, dark sugar, slightly burnt caramel aromas. Really dark taste, molasses and raisins. Body is super thick and sticky. Overall, this is intense.

Deep black pour with a thick mocha-colored head. Sticky and fine laced. Long lasting. Intensely leathery and rich. Loads of cocoa, vanilla and sweet oaky flavour. A lot of rich cocoa and some heavy char and caramel. A bit of spiciness on the back but itís restrained by the sweetness a bit. A bit vineous with some nice leathery/salty back notes. Pretty rich and very tasty.

Sweet vanilla, bourbon-like nose, winey notes, chocolate and dark dark malts, not a very powerful nose but beautiful and complex. Completely black, canít see through this one at all, brown head is not huge but has pretty good retention. Taste is pretty amazing and complex, upfront come the boozy barrel flavors, followed by creamy milk-chocolate notes and a bit of hop bitterness in the aftertaste. A tad of soy-sauce as well. Amazingly complex, thick bodied and average carbonation. Definitely a great sipper.

(Draught at the brewpub, Oct 31 2013) Pours pitch black with a small bubbly pale brown head. Aroma fruity cognac, woody, boozy with roast and chocolate malts. Palate initially contains tons of cognac and that doesnít really dissipate. Underneath that is sweetish chocolate and a bit of wood at first. Mid-palate the wood comes a bit more to the fore but cognac and malts predominate. In the finish alcohol is quite noticeable along with normal Hellwoods bittering hops, dry and slightly roasted. Mouthfeel full, not too syrupy, very soft carb, lots of alcohol heat. Barrel owns this one, but itís a lovely barrel. One feels as though one is drinking a good brandy hybridized with a good RIS. Lush.

Bottle thanks to Dany. Pours tar black with brown head. Nose and taste of cognac, roast chocolate, chocolate pudding, vanilla, oak, licorice root and brownie. Full bodied. Well balanced.

Cask at the brewery, served in a snifter. Pours deep chestnut with a small tan head that fades slowly to a remnant and leaves a few bubbles of lace. On the nose, there are big notes of cocoa, cognac, oak and toasted malts, along with subtle smoke, dark fruit and herbal hops. The flavour is moderately sweet up front with big cognac and molasses notes. It becomes even more sweet with loads of chocolate and molasses contributing to a rich, complex sweetness. Cognac emerges again towards the end, along with vanilla, oak and subtle smoke. The finish is long and malty with a nice roasty character. On the palate it is full in body with a smooth, creamy texture and soft carbonation. Overall, this is an excellent cognac barrel-aged imperial stout. It is beautifully complex and elegant with just the right oaky-cognac accent. 2013-04-07

Draught at Volo gorgeous - thick opaque black pour, thick tan lacing head. Fantastic aroma - deep oily roast aroma, soy, prune, some alcohol, just lush, mirth and appealing. Taste follows, so subtle and almost light - follows, a little mineral character, very light fruit, not big at all. Airy, thick as hell, frothy but not hugely carbonated, medium-long oils nutty dry almost burnt toasty finish - subtle, great. Superb.

Draught at Volo, April 12. Pours black with an average size long-lasting creamy beige head and tons of lacing on the glass. Aroma has lots of roasted malt, coffee, a good amount of hops, alcohol and a touch of soy sauce (in a good way). Flavour follows the aroma, itís a bit boozy but itís really flavourful. I donít really get the barrel-ageing qualities of it, which I donít mind. Medium bodied. Creamy mouthfeel. Simply fantastic!
