(Cask @ Volo?, from old notes) Black pour with a small tan bubbly cask head, a bit of lace. Aroma is as one would expect, a big hit of sour cherry, nice dark chocolate, some light to moderate roast. Flavour also has a bunch nice sourish fruity cherry character, quite a bit of dark chocolate, a little coffee and moderate roast/dark malt imperial stout character. Fruit persists all the way through to the fairly dry finish, lending some tartness. Medium bodied but a bit oily, nice cask feel, good balance of acidity, sweetness and roast, alcohol fairly restrained. Pretty much what you’d expect, a good base imperial stout with a lot of sour cherry character added to it, but very nicely balanced sipper of a package. Chocolate and cherries a super combination.

Cask at Castros - brown look, litle cask head - wow predominant sour and sweet cherries in aroma and taste, moderate acidity, a bit of mineral and cellar quality. Called 3 minutes to midnight on the slate.

[4890-20121027] Cask. Cherry juice aroma. Black body with a quick creamy tan head. Sour cherries dipped in dark chocolate flavour. Full body has a neat twang. Tasty but overpowering initially. (8/3/7/4/16) 3.8

Cask Days 2012.
Jet black, small mocha head. Pretty much the same as the regualr hellwoods with the obvious addition of sour cherries. Honestly i didn;t see much of a differece. a slight sweetness, and acidity, but really nothing mind blowing. but he base beer is so damn good, i didnt care.

Cask at Cask Days 2012. Nineteenth beer of the fest. Pours a very dark brown, almost black, with a spare but long-lasting bubbly light-brown head. Lots of sour cherry in this, it’s quite pleasant, along with roasted malt, a good amount of chocolate, some coffee -- almost like a chocolate cherry liqueur. There’s some alcohol but for 10% it’s fairly well hidden. Medium bodied. Almost creamy mouthfeel which is impressive for a cask beer. A lovely beer.

2012-10-27. Black, nice small frothy tan head. 3+ Very interesting aroma, sour fruity cherry mixed with a nice dusty malt character. 8+ Flavour is similar, lovely sour cherry character is quite fruit, mixes nicely with a dryish malty character and mild roast. 7+ Smooth average palate. More cherry focused than I would have thought wise prior to trying it, but it turned out rather nicely! Very good. Cask Days 2012 at Brick Works, Toronto

October 27, 2012 - 8th Annual Volo Cask Days. Black with a smallish foamy light brown head (4-). Smells of roast coffee/nutshell, and tart cherry pie - quite redolent of sweet/sour cherry - almost a bit reminiscent of Black Forest Cake, some alcohol (8-). Taste - wow, that’s cherry ... background solid impy stout roast, moderate alcohol, but mostly sweetened hugely acidic ripe cherry - simple, sour, very bitter - love it. Slick, average body, weakly carbonated, acidic and increasingly bitter in the finish - smooth as hell, apart from the tingling from the cherry sourness.
