COMMERCIAL DESCRIPTION
At the lighter-bodied end of the Belgian style Tripel category, this pale gold-orange ale is spicy, fruity and floral with notes of apricot, peach and clove. Trappist yeast with bravo, styrian golding and sterling hops. Body is pilsner, oats, wheat and abbey malt. Pilot was brewed stronger to 9.5% (draft only). Draft 7.5% ABV, bottles refermented and 8% ABV.

Bottle from the brewery. Sunset golden-orange with a slight haze and a thin & persistent white head. Punchy aroma with notes of stone fruit - esp. apricot - and tart apple, and spicy hints of clove and allspice. Flavour starts with a simple malt sweetness with a hint of candi sugar, but starts to develop layers of complexity as it goes across the palate, especially once it warms. Apricot, nectarine, peppery yeast, clove, lemon zest, cut grass, candied orange and more all come through at one point or another. Finish has a slight medicinal character that is the only off-note for me. Otherwise, an excellent beer.

500 ml bottle from brewery retail store. Pours a murky rust colour with large eggshell-coloured head. Aroma is gently tart fruit (apple, peach), spice, bread and floral hoppiness. Flavour is most prominently of lightly tart apple/pear and peach, bread, clove, flowers, and hints of funk and pepper. Medium to medium plus body. Drying finish. Quite drinkable tripel.

500 mL bottle from the brewery, served in a branded stem glass. Pours cloudy orange-caramel with a moderate beige head that mostly remains and leaves a small amount of fine lace. The nose has notes of caramel, peach, apple, clove and Belgian spices, along with grass and touches of licorice and pepper. The flavour is lightly sweet with a complex, fruity-spicy character. Notes of apricot, caramel, grass and Belgian spice come through as well with a subtle pepperiness. The finish is long and dry with malts and spice. On the palate it is medium in body with a dry texture and soft carbonation. Overall, this is a decent tripel, but lighter and drier than most examples. A nice example, but for the ABV, it could be more complex. 2014-05-21

500 mL bottle. Pours hazy amber with a nice white cap. Nose is stone fruits (peach/apricot), candi sugar, floral hop, spice and sweet malt. Mildly sweet cut with balancing alcohol and a bit of bitterness. Surprisingly clean and thirst quenching. Moderate plus body with above average carbonation. Tasty, but not as aggressively flavoured as many tripels.

(On tap at the brewery, April 17 2014) Pours a quite hazy pale orange with a small white head of fine bubbles, a little lacing. Aroma of candy sugar, a little pit fruit and orange peel, white bread, floral/spicy hop/yeast character. Flavour is cereal malts, faintly sweet but with very little candy sugar character, citrus, a bit herbal, light clove, low ester character. Lightly bitter throughout but finishes noticeably dry for a tripel, noble-type hops apparent in that finish, a bit peppery. Body medium, carb pretty soft, no booze noticeable. A crisp and refreshing take on a tripel, not mind-blowing but good, could use a sunny day.

April 24, 2014. On tap at Bellwoods Brewpub. Orangey yellow, cloudy. Small yellow-white head. Faint aroma of citrus, aroma quite faint. Quite a lovely beer. Orange flavour, gentle bitterness.

My Bottom Line:
Bursting bubblegum esters and floral hops dance upon honeyed cereals in this expressive yet limp Tripel interpretation.

Further Personal Perceptions:
-A ring of foam covers the cloudy pale amber.
-This is quite undercarbonated for a Tripel. I hope they ramp it up if/when they bottle it.
-Yeast character is boastful throughout.
-The finish is made of herbal hop bitterness and balancing cereal sugars.

On tap at Bellwoods. Pours an opaque light orange with a thin, white head. Aroma is slightly acidic and spicy with notes of orange citrus and candy sugar. Taste is balanced with orange citrus, yeast, candy sugar and a touch of a farmhouse funk. Medium body with a medium-high carbonation. Very slightly syrupy in the mouth with an effervescent carbonation and a dry finish. Overall pretty tasty. Lots of classic triple flavours with some farmhouse funky citrus and candy sugar.

A hazed copper amber ale with a thin lacing off white head. In aroma, sweet fruity candy malt with banana, coriander, curacao, classic. In mouth, a nice crisp fruity malt with light banana, coriander and curacao, light alcohol warmth, alcohol warmth, very nice. On tap at brewery.
