COMMERCIAL DESCRIPTION
Bottle or barrel fermentation. Just like in our grandfathers’ days the after-fermentation and maturing of Hefeweizen takes place in a bottle. We also apply this classic procedure to barreled Hefeweizen. As one of only a few breweries we can speak of "genuine barrel fermentation". Unfiltered, with natural yeast and proteins, it is directly transferred from the fermentation tank to barrels and bottles.

The bottle looks good, the beer in the glass also. Starts mild, almost washy. Finish dry, notes of flour. Not very fruity. Only average!

Tap zum Ochsen. Gorgeous creamy bright white head but the body is a sickly sort of pale yellow cloud. Yeasty nose huge on the banana esters, which don’t usually register with me like this, and not much else. Lightish body with a hint of grain into the aftertaste. Very light, watery body, actually. Good light wheat note reminds of some American wheat ales. Slick without much of a yeast contribution.

Pours a hazy golden yellow. Aromas of bread/grains/ and some citrus. Had a taste of cheerios with some lemon or orange.

Slightly cloudy golden coloured beer, head should hold some longer. Fruits, both citrus and banana, and a decent amount of yeast. Both smell as taste. Not great, a bit medicinal, but had worse...

Bottle 50cl, a cloudy yellow beer. Nose is yeast like and a bit lemony. Aroma is weizen like, a bit sweet, some lemon hints, body is thin. Spicy hops at the finish, less fruit notes, near to a radler beer.

Bottle 500ml. @ home.

Hazy - murky medium grey yellow color with a large, frothy to creamy, good lacing, mostly lasting to diminishing, off-white to white head. Aroma is light malty, light moderate yeasty, fruity, light rubber, chemistry notes. Flavor is moderate sweet with a average to long duration, fruity, yeast, banana, light candy (skum banan). Body is medium, texture is watery - creamy, carbonation is soft. [20101107]

Tap @ Grüner Baum Biberach. Blonde, cloudy. Banana and grass in the aroma and flavor. Clove. Just a tad thin. Grassy, yeasty bitter aftertaste. Mediocre.

Bottle (thanx, Quack-Duck!): Pale golden, hazy, rather quickly collapsing white head; cloves, bananas and wheat in the sweetish-sourish nose; moderate sweetish flavour with a light acidity, light to medium bodied; sweet-fruity (bananas, oranges) and sourish finish with some clove-spiced tartness in the aftertaste.
