Dark amber with a frothy tan head that lingers. Funky musty barnyard aroma with lemon and oak. Light carbonation and oh so smooth. First taste is lightly sour with a dark caramel sweetness. Flavors get complex from here with tart cherries, candi sugar sweetness meshed with earthy musty leather. Lots to savor here, the 11% is not noticeable even at room temperature. Very nice beer.

Bottle and enjoyed in my Big Karmeliet glass: Mahogany hue with a fizzy head and okay lace. The aroma has notes of tart cherry and green apple, moderate lacto acid, oak and some charred smoke, herbal and earthy esters abound, some dark sugars too. The taste starts twangy and fruity with a mild tone of wild yeast all up in there. The midesection displays some caramel and bready tones with a woody and hop spice finish. The mouth feel is lively and medium-bodied with a spartan dry finish and moderate warming upon chest. These big sours from BFM are the bomb, yet another winner in the Abbaye de Saint Bon-Chien line of ales (too bad most of the other BFM beers are not as good).

(Rating #1608)

Thanks Tim. Mahogany/ruby body and a tan head. Nose is plenty of crisp apple, wood, tartness that isn’t quite balsamic - kinda twangy. Flavor is tart, appley and woody. Some sort of greens are hanging out there (not in a DMS sense) Finish is also quite woody, cherry pit develops as it goes on. A bit of alcohol hanging out there too.

Sampled at the North Park Belgian Beer Party at my house on 3-29-08. Pours wtih a cloudy red-amber body topped by an thin to medium, off-white head with a good amount of lacing. It’s slightly sour yet bitter with an underlying sweetness and some vinious notes. Light bodied, dry and crisp.

Nov. 2007 - Pour was dark honey brown with some head and lacing. Aroma of vinegar. Flavor was fruity malts with a mild vinegar sourness and strong wood notes. Thanks to eaglefan538 for sharing.

Bottle: Poured a light reddish color ale with a huge foamy head with great retention and good lacing. Aroma consists of sour notes with some oak and some weird funky barnyard type ester. Taste is also an interesting mix between some sour notes with great French oak notes. It really reminds of a great Flemish sour but the funky barnyard notes, which I usually appreciated in my lambic, doesn’t provide the best fit IMO. Good body with some great carbonation and no apparent alcohol which is quite spectacular considering the 11% of alcohol. I think in retrospective that I preferred the 2005 over this but this is still a freaking good beer.
