Courtesy mgumby10. Ugly, murky brown with a small, dense, tan head. Aroma of tart, vinegar soaked, vinous dark fruits, heavy oak, light spice, and subtle alcohol. Same flavors with some added red wine character. Medium/full body, balanced carbonation. A little heavy, but easy to drink. Great flemish sour.

Bottle. Beautiful ruby/amber color with a nice light tan head. Great spicy (cinnamon), berry (mostly cherry) aroma with a bit of tartness. Tart, cherry flavor with nice malt backing. Tartness lingers with the cherries and a bit of darker malt. Alcohol warms nicely (yes, there is a fusil character in the background that gets stronger if you start to pay it attention, but if you don’t, it complements nicely). LIngering cherry, spice, and oak. Body is a bit vinuous, but it’s mostly the high carbonation that detracts if anything, and a few swirls makes it very nice. A bit of graininess starts to creep in.

Bottle. 2006 Blended in October 07(?)Nice garnet colored pour with almost no head. Sour cherry aroma with some cinnamon and straw notes. Strong sourness and a thick mouth feel that don’t tend to match up very well. Slight cherry notes, big grainy malt presence. Hot with an almost fusil alcohol character. Tastes very similar to a lambic I brewed a while back that got a little too warm during fermentation. Spicy, lingering aftertaste.

God I hate gushers, especially at $25/bottle. Who cares though, this beer ends a long streak of ambers, blonds and pales. Cloudy burgundy body, some head, lace and retention. Sour, vinous aroma with fun yeast, dark sugar, caramel, more. Medium to heavy body with a sour finish. Who else has the balls to make an 11% Sour and balance it?

poured into goblet. pours a cloudy amber with full head quick to diissipate, sour aroma, sour thruought with sticky finish. sweet peppers, spiciness all within its complexity. acidic presence perhaps, flat on palate.

Bottle. Excellent sour ale nose of sour fruit (mainly cherries) and dry/funky yeast. Some hay. A bit of wood. Some brett funk, alcohol and sugary sweetness. Pours a dark cloudy copper brown with a cooked oatmeal brown head that fades quickly. Very sour flavor profile with some definite sourdough like yeast notes. Some brown sugar snd spice. Nice interplay of sweet/sour fruit and yeast/oak dryness. Very dry, sour and firm on the palate with some heavy carbonation. Finishes quite sour and dry. A most unique beer!

Dark coppery colored, cloudy appearance. Little light brown head. Strong sourness in aroma with berries and this funny, still positive wet-mushroom aroma. Medium bodied, crispy carbonation. Flavor is also of course sour with still some lemony touch, even some wooden tones there. Good, still very different from 2005 version.

Bottled. Hazy brownish colour, mediumsized beige head. Aroma is sourness and some bitter fruits along with nuts and overall quite brutal. Flavour is sour fruits nicely balanced up with some wooden hints. Way better than the 2005 one in my opinion.

UPDATED: JUL 6, 2007 Bottled. Cloudy amber, average sized beige head. Lemony lactic aacidity and dry white wine up front. A bit slimmer and more vinous than the 2005, but less woody and soapy. The moutfheel is rounded and spritzy. Low on hops, but intriguing and interesting. As always from BFM a very unusual beer.

Hazy nut brown color, steady beige head, floating yeast particles. Wet paper and mushrooms in the nose. Fruity, sour, wineous, almost vinegarish flavors. Very balanced, clean, stylish Flemish sour ale. Long lambic-like sour-fruity aftertaste. These BFM’s Abbaye de Saint Bon-Chiens are world class beers!
