COMMERCIAL DESCRIPTION
The color of this beer points out the old wines of Burgundy with their red tile with a light foam collar. With the nose, the ASBC surprises, because one finds there a range of very astonishing flavours, spices (grooves, wooded), of the brandy odors, ripe fruit and point liquorice and vegetable dry. In mouth, it is necessary to take more time than a beer of conventional tasting: one starts with velvety, raised of light carbonic giving a little nerve, to arrive on a light acidity of the vinous notes and a very low bitterness. The ASBC strikes by its length in mouth and its Port side. It is appropriate well for example for a steaklet of duck or foie gras stove thawed with the vinegar of Modena or for a bitter chocolate.

UPDATED: JAN 10, 2009 Pours out cloudy amber brownish color with no head. Smells like a sour, slight vinegar. Taste is sweeter than expected, but still sour. Nice blend of an abbey and sour. Tart, funky with some wood. Different and creative brew.

pours a cloudy reddish-amber colour with almost no foam; complex vinous aroma, sourish notes of vinegar, apples and portwine; medium malt body maintained by a fair carbonation, sweet and sour; very long fruity and sourish aftertaste with a warming alcohol touch - maybe the most achieved and subtle of the Saint Bon-Chien

750ml. Like a cross between a Belgian Strong and a Sour on the nose. Funky, tart cherry and grape skin. Balsamic. Sweeter, heavy candied malt. Some spice. A touch of lacto funk and brett as well. A warming, but not distracting alcohol hotness. Pours a thick, hazy, dark maroon/brown. Nearly still looking with virtually no head. Excellent flavor profile. Brett, lacto funk, malt, tart fruit skin, oak tannin. Loads of fruit, malt, funk and oak. Acidic vinegar. Thick, oily body with excellent carbonation. The alcohol is ever present but the warmth adds to the flavor. Excellent now, but I think this will age quite gracefully. Thanks Dan!

Tap at The Diamond: Pours a hazy headless amber. The aroma has apparent alcohol, with notes of acetone, cranberries, a touch of oak, leather and more alcohol that tingles the nostrils. Slick body, with tons of apparent alcohol in the flavor. When it warms some cranberry tartness and earthy brett notes are detectable (leather), with some oak tannins as well. The finish is pleasantly dry, but the alcohol just masks all other nuances that would make it great. Slightly disappointing; perhaps age will mellow out the alcohol.

UPDATED: FEB 26, 2009 Draft. Pours a bit of a hazy brown-red, with a thin, fizzy off-white head. Nose is just a bit hot, notes of berries and red fruit in the nose (strawberries, cherries) alongside some tart, mildly astringent vinegar. Taste is sour cherries, vinous, a very understated note of vanilla and oak. Sourness is light and only mildly acidic - clean, light notes of wet leather and acetic astringency. Sophisticated, no hint of alcohol. Light in body, crisply carbonated.

Pours an orange-brown with a fizzy head... good retention. The aroma is wonderful... lots of light yeast, apples, cinnamon, with hints of malt and maybe tiny traces of chocolate peeking through. The flavor is like a combination of a Duchesse de Borgogne and a geuze, with some of the nice strong breadiness of a Gouden Carolus Grand Cru. So it’s essentially a combination of some of my favorite beers. For the price, I wouldn’t buy it too often, but you have to try it at least once. I’m really impressed with BFM, they really make great beers.

Bottle pours a rusty brown body with a small and quickly vanishing beige head. No lacing. Aroma of musty old oak logs, caramel, vinegar, and apple cider. Earthy and woody feel on the palate with subdued carbonation. Taste features very prominent oak tones, joined by sour cherry skins, apple cider, vinegar, and other tannins. Tastes more like a lambic than a sour ale. Alcohol is concealed very well. A pleasant experience.

750 ml bottle shared by cdog69. Pours dark amber/brown with no head. The aroma has come gape tannins, Sweet Tarts, and vinegar. Cider flavors, with some kind of candy thing going on. Very acidic and tart. Full body. Average carbonation. Dry finish. Pretty good.

Bottle 750 ml. Murky brown color no head. Very sour, lemon and cherry pit flavor. Cheese rind aroma. In the end I sense a little alcool. Very good.
