COMMERCIAL DESCRIPTION
Biere de Garde matured in oak barrels, mixture of 11 barrels of 225 litters: 6 Pinot Noir, 2 Chardonnay and 1 Pinot Gris de Neuchatel, 2 Merlot du Tessin. L’Abbaye de Saint Bon-Chien, Strong sour ale, 11% vol. is a real UFO, is a beer brewed in honor of the former brewery cat, sanctified in her disappearance. This vintage shimmering red-amber is matured for months in oak barrels that previously contained wine or eau-de-vie. The drums give a very complex flavors this beer. In the mouth, she recalls the plot of a fruity red wine with a very sharp acidity.

Bottle. Pours clear dark chestnut with no real head. The has cherries, plums, oak, grapes, red wine. Low carbonation, fine dry and quite light and fairly creamy mouthfeel. Flavour is elegant, oaky dry, grapes, caramel, sugary, vinious, lots of pinot noir. Quite tart and dry overall. Wonderfully complex and elegant, with only a slight paraffin note to detract.

Mørk rød farge med tynt hvitt skum. En veldig spennende øl. Lukter syrlig bær. Medium søt. Smaker syrlige kirsebær. lively carbonation. Munnfølelsen er fyldig. Denne kan jeg anbefale.

Amazing beer, last one at Bar Volo. A drinkable sourness, sometimes found in saison style, with only the faintest wine barreling in the finish. Rich, spicy, cherry.Smooth.

Bottle from Charleston Beer Exchange. It pours deep red with a small white head. The nose is red berry, vinous, wood, earth, light vanilla, toasted coconut and natural yoghurt. The taste is tart red berry, vinous, wood, light acidity, jammy fruity, damp leaf, crisp acidity, mustiness, yoghurt, alcohol and tart green apple, with a dry finish. Medium body and moderate carbonation. Crisp tartness, good depth and balance. Another winner from BFM.

On tap @ Lion’s Pride (Brunswick). Slightly hazy dark amber with a small persistent beige head and good lacing. Aroma is really unique... port, wine, spirits, oak, red fruits, grapes, caramel... what a strange beast here... so complex! It’s not easy to adapt to this, but it’s really hypnotizing! Taste is moderately sweet and moderately sour, really fruity, somewhat acetic with oak, wine, port and lot going out here again. Alcohol is well hidden for an 11% abv Sour. The mouthfeel is even weirder than aroma/taste. It’s sirupy and winey with low carbonation and a medium to full body. It’s probably the most complex beer I’ve tried so far and it’s really unique. Not easily drinkable due to high abv and high complexity, but it’s not meant to be refreshing either. Superb!

Appearance: Clear ruby to mahogany body, no head.
Aroma: Tart cherries, slightly sour, some vinegar.
Taste: Tart, fruity with cherries, mildly tart to sour with oak dryness.
Palate: Medium bodied, spritzy carbonation.
Overall: I enjoy this, very well balanced and complex.

750 ml bottle shared with Mike et al, cool, tulip, bottle 276.! Hazy deep amber copper with a white rim and big chunks in the bottom. Strong, peppery, intensely funky, vanilla, nice maltiness, tart fruits, alcohol, solvent, intense, interesting. Medium body, quite low effervescence. Rich fruity malts, peppery notes, plenty of wood, red wine, some booze, a bit of funk, a bit of solvent, big and complex; dry with some tartness and a fair bit of bitterness and a long, peppery, funky, fruity, boozy, a touch of solvent.

Hazy red amber color. Cherries, green apples and oak in the nose. Very tart, oaky with tons of cherries and strong green apples. Big lingering sour, slightly harsh finish. Perfect until the end.
