Biere de Garde matured in oak barrels, mixture of 11 barrels of 225 litters: 6 Pinot Noir, 2 Chardonnay and 1 Pinot Gris de Neuchatel, 2 Merlot du Tessin. L’Abbaye de Saint Bon-Chien, Strong sour ale, 11% vol. is a real UFO, is a beer brewed in honor of the former brewery cat, sanctified in her disappearance. This vintage shimmering red-amber is matured for months in oak barrels that previously contained wine or eau-de-vie. The drums give a very complex flavors this beer. In the mouth, she recalls the plot of a fruity red wine with a very sharp acidity.

Bottle. Pours hazy amber with thin, creamy beige head; decent retention and spare lacing. Aroma is sour fruit, cookie and bread malts, booze, with light floral hops and spice. Flavor is average sweet malt, faint hops, and heavy sour esters; sweet, fruit and malt finish. Medium body and warmth with low carbonation.

Bottle. Pours clear tawny with a medium, frothy off-white head, short retention with light lacing. Aroma is cherry, plum, and raspberry with light acetic character, light malt, earthy and barnyard notes. Flavor is sour and tart berry fruits, light malt, hops, and bitterness with a dry finish. Medium-full body, medium warmth, and light carbonation.

[4133-20111119] 12.68floz bottle (incorrect). Light beef malt aroma. Slightly hazy, red amber body with a quick foamy white head and some thin lacing. Sweet boozy malt flavour has an overpowering roasty caramel malt throughout. Medium-full body. Interesting but something off in it that I don’t like. (7/3/5/3/14) 3.2

Bottle from Monument Liquor. Pours amber with a modest beige head and a sour fruit aroma. There is a very sour malt falvor with something that tastes like cinnamon and a very dry acidic finish.

2011-11-19. Lightly hazy dark amber-red body with a small beige head and film. 3+ Flavour is funny, sort of cherry stem/leaf notes, modest cherry flavour, modest sourness throughout, modest alcohol grows as you go. Mild aroma, sour cherry and cherry pits. 6+ Average plus palate. Meh, not loving it. Bottle from Premier Gourmet, shared at Rudolf’s Sourfest 2011

Bottle looks really good, although a bit complex. Beer in the glass brownish, huge head. Starts modest sourish, fruity like sour apple and grapefruit. Some spicy hints. Finish drier, still sourish. Okay.

Tap at Paradiso Dupont. Pours a hazy reddish tea amber looking like glowing strawberry in the glass. No head formation. Nose is big impending sourness, mild acetic presence, lots of complexities like nectarine, strawberry, raspberry, sea salt. Taste up front is pretty smack your face sour, bits of acetic "heat", big lactic presence and only hints of balsamic character. Wet oak, fatty yogurt, sea salt, lots of red wine character. Very Flemish red in profile. Berry heavy and fruity. Reminds me of a very sour strawberry smoothie. Very enjoyable. 11% only makes itself evident after you’ve demolished the entire glass. Be careful!

Bottle 75cl from Cave a Bulle bottle #276. A clear red beer without head. Nose is near a rich oude bruin like Rodenbach. Aroma is fruity, tartric, lactic, dry, near to a lambic, bit cherry like, with almond notes, wood notes, complex. Difficult to detect it’s a 11° beer on the taste, nice but a bit too dry for me, anyway a very pleasant beer.

On tap at Max’s. murky chestnut with lasting thin tan head. Nose is sweet, cherry chocolate and balsamic. Flavor is brine, cherry, chocolate, light paper. Bit soft, overly sweet, estery profile with too much acidity and darker malt clashing in the finish, though thankfully no chest burn.
