COMMERCIAL DESCRIPTION
Biere de Garde matured in oak barrels, mixture of 11 barrels of 225 litters: 6 Pinot Noir, 2 Chardonnay and 1 Pinot Gris de Neuchatel, 2 Merlot du Tessin. L’Abbaye de Saint Bon-Chien, Strong sour ale, 11% vol. is a real UFO, is a beer brewed in honor of the former brewery cat, sanctified in her disappearance. This vintage shimmering red-amber is matured for months in oak barrels that previously contained wine or eau-de-vie. The drums give a very complex flavors this beer. In the mouth, she recalls the plot of a fruity red wine with a very sharp acidity.

Bottle shared during AZRBWG. Pour is deep hazy red/amber with no head. Aroma shows tons of lactic tartness with notes of berries, oak, and vinegar. Flavor shows the same with a definate vinous character as well as toasted oak and a touch of funk. Overall body is moderate and the acidity is sharp.

750ml bottle thanks to bman1113vr. Hazy brownish amber pour - aromas of grapes, cherry, and oak. Flavor is sour with a bit of sweetness as well. Tasty.

2009 750ml bottle. Pours with a hazed copper-brown body with a thin off-white head. Aromas of cork, funky, fruity, pepper, acid and plums. Flavors are fruity with a short duration. A bit of oak. Alcohol on the palate with decent carbonation. Vinous.

Reviewed from notes. Pours a slightly-browned garnet color with a thin off white head and a tiny bit of lacing. Nose brings some lactic sourness, cherries, hints of dark fruits, and a bit of earth. Taste and feel add in a nice oak presence and the sourness becomes a bit more prevalent. The cherries and light malt fit well together bringing a nice bready character out. 750ml bottle. Poured a deeper and hazy amberish/brownish color with a smaller sized off white head. Aromas of wood, vinous, brett, funky, and grapes. Tastes of wood, vinous, cherries, and grape skins. Flatter body with the alcohol content hidden.

Draft. Pours hazy ruby with virtually no head. Aroma is funky, grape, merlot. Flavor is tart with a big cough syrup taste, overly sweet with brown sugar notes and a lot hot booze in the finish. Lack of carbonation didn’t help. Needs a few years to mellow.

On tap at Trappeze in Athens, GA, this obscurity tasted as complex and idiosyncratic as the bizarre processes that produce it. The barrel aging dominates both the flavor and the aroma, making for a very wine-y beer with few elements of malt or yeast present. The flavor strongly evokes merlot, while the flavor starts with merlot before fading to pinot noir and ending with the astringent bite of the grappa. This is a pleasant after-dinner sipper, but it’s hard to think of other occasions on which I would like to drink it. Tasty, but sour, and a bit less fantastic than its reputation or price would suggest.
