Biere de Garde matured in oak barrels, mixture of 11 barrels of 225 litters: 6 Pinot Noir, 2 Chardonnay and 1 Pinot Gris de Neuchatel, 2 Merlot du Tessin. L’Abbaye de Saint Bon-Chien, Strong sour ale, 11% vol. is a real UFO, is a beer brewed in honor of the former brewery cat, sanctified in her disappearance. This vintage shimmering red-amber is matured for months in oak barrels that previously contained wine or eau-de-vie. The drums give a very complex flavors this beer. In the mouth, she recalls the plot of a fruity red wine with a very sharp acidity.

Delicious sour. On draft at Memphis Taproom. Very complex, hints of cherry, vanilla, and funk. Pours deep amber. Nice acidic bite to complement the high ABV.

On tap at Farmhouse in Burlington for their Big Ass Beer Event. Bright ruby pour with absolutely no head. This beer is completely flat. Aroma is marked by fantastic sweetness in the form of both the chardonnay barrel with vanilla and wood, along with big dark fruit, cherry and orange peel. This combines with an excellent funkiness that melds delightfully with this woody and boozy presence. I think this is significantly better than the 2006. Delicious.

bottle, orange amber pour. pretty light aroma, notes of tangerine, st josephs aspirin. citrusy, orange. definately a high wine presence, some oak with a good dose of acidity. Pretty flavorful

on tap @ redlight redlight for sourfest. Sour fruit upfront with sharp citrus acidity, balanced by oak with some vanilla notes. Slightly more acidic than other vintages I’ve had with some acetic notes as well, but not too much. I love BFM.

Im Duft sehr weinartig, säuerlich nach Apfelmost und Rosinen. Antrunk keineswegs brachial sauer, sondern fein säuerlich. Mittig weiterhin säuerlich (vergorener Apfel), Rosine, Weinhefe, Holzfass und Muskat. Dabei intensiv weinartig und schon ein Alkoholnebel, der am Gaumen klebt. Abgangs trocken sauer, branntweinartige Noten und sehr liquide. Das Abbaye de Saint Bon Chien bietet eine nahezu perfekte Mischung von Wein und Bier - der Wein steht im Vordergrund. Hätte ich nicht so gelungen eingeschätzt. Hut ab.Test vom 23.1.2011, Gebinde: Glasflasche

Hazy ruby body, light tan head. Nose is barrel, caramel, some over ripe fruits, alcohol, paint thinner. Flavor is caramel, alcohol, some tartness, phenolic clay. Meh.

Courtesy of BMan1113vr. Hazy caramel color/ thin beige head. Vinous, tart cherry, wood bug, mild barnyard aromas. Cherry fruit, wood tannin, caramel, mildly tart lemon, cinnamon flavors--good.

Bottle shared during AZRBWG. Pour is deep hazy red/amber with no head. Aroma shows tons of lactic tartness with notes of berries, oak, and vinegar. Flavor shows the same with a definate vinous character as well as toasted oak and a touch of funk. Overall body is moderate and the acidity is sharp.

750ml bottle thanks to bman1113vr. Hazy brownish amber pour - aromas of grapes, cherry, and oak. Flavor is sour with a bit of sweetness as well. Tasty.
