[ Courtesy of fiulijn ]. Unclear dark black brown color with a small average, frothy to fizzy, fair lacing, fully diminishing, light beige head. Aroma is moderate to heavy malty, dark roasted, vintage malt, chocolate, burnt notes, soy sauce notes. Flavor is moderate to heavy sweet and light bitter with a long duration, soy sauce notes. Body is medium, texture is oily, carbonation is soft. [20100307]

33 cL bottle, courtesy of Bov, 2003 bottled. Pours dark black with a small tan to chocolate brown head. Dark malty and winous aroma. Wineous and dark malty flavoured, light fruity note. Lingering hardroasted malty and nice fruity. Still good carbonated. Smooth fruity into the finish with a lingering dark malty base. Lingering mild acidic finish. Old - but certainly still interesting and nice.

Ungstrup (29217) - Citizen of the universe, DENMARK - JUN 17, 2004
A black beer with a chocolate brown head. It is very explosive. It doesn’t have much aroma only hints of chocolate and coffee. The flavor is slightly sour with notes of chocolate and coffee.

Papsoe (25088) - Frederiksberg, DENMARK - MAR 10, 2006
(Bottle 33 cl) Semi-aged sample - bottled in July 2003. Pours a clear, warm mahogany with a reddish hue and a neat, beige head. Actually a surprisingly light body. Very vinous accents - balsamico - reminding me mostly of a Flemish Sour, albeit some lightly burned notes of malt appear in the finish. According to the label it’s meant for cellaring, but I doubt if the acidity is intentional. But generally I find it very lovely. Thanks to Bov for this. 100306

Bottle at home, thanks Alex. Dark brown coloured with a small beige head. Fruity aroma of licorice, dried fruits and vanilla with notes of soy sauce. Fruity flavour of dried fruits, soy sauce, licorice and vinegar. Fruity finish.

UPDATED: MAR 2, 2004 Bottled. Reddish black with lively head. Acidic black cherry aroma. Medium bodied, Clean maltiness, with some roasty coffee and near lambic-ish notes. Bitterish finish. As always with BFM their beers are interesting and very unusual.

Brown color; big creamy head, brownish. Very nice aroma, sour, woody; reminds the forests and the cellars, the crust of a hard cheese… Medium body strength, astringent in the front; a good mix of caramel and malt, sourness and bitterness, light liquorice and very light roasted malts. Really an original and interesting beer, from Switzerland. Thanks Philippe (Bov)!

Bottle, 7.5%. Vinous aroma, smells well-lagered. Very dark brown colour. Small stable light brown head. The flavour is roasted and vinous, hint of cream. There is a distinct acidic note, perhaps lactic, a bit like sour malt. Works all right, though, especially considering the age. Tastes all right, but on the other hand, it a bit odd.

Nicht karbonisierter Antrunk mit deutlich fruchtig-vergorenem Malz. Die fruchtigen Beikomponenten werden schnell schwächer, das pure Malz steht nun wieder mehr im Fokus. Das Bier wirkt durch die schon längst verflogene Kohlensäure natürlich sehr eigen und süßer als es sonst der Fall wäre. Dennoch merkt man, dass das Bier ausgereift ist und aromenmäßig einiges zu bieten hat(te). Mittelaromatischer Abgang mit deutlich oxidierten Noten. Vielen Dank an den Doppelbock für den gemeinsamen Test. 9/8/6/10/9/9
