A careful pour produces a clear golden amber colored elixir with a thin bubbly white head that dissipates quickly but leaves a cap on top and some lacing on the sides. Smells of citrus and phenolics, plums, spicy yeast and funk. Taste is tart and fruity with a barnyard edge. Finishes sweet with a bit of astringency and leaves a lingering tart bitterness on the tongue. Crisp carbonation, sticky mouthfeel, medium to thick body. Nice little saison, bier de garde. Tart and fruity I enjoyed this one. If only it wasn’t so pricey.

Cask. Pours hazy brown with a big rich off-white head. Aroma is cheesey hops, herbs, funk, and light citrus. Flavor is slightly tart with citrus and floral hops and a caramel malt. Not sure what the hell this is but I liked it.

750 ml - 2006 A: Poured a hazy/cloudy ruby-ish amber color with a huge off-white head with amazing retention. Leads to a decent amount of lacing. S: very sour esters. Tart green apples, some sour citrus as well. T: This hasn’t mellowed much over the past year or so, and if it did it is too hard to tell. Very tart/sour which kind of destroys any flavors coming in. Mostly sour citrus. You can also taste the alcohol right behind the initial sours. M: Good mouthfeel, carbonation is a little too high. Very interesting palate, sours with a hint of sweetness. D: very interesting beer. Not quite what I expected but I look sour beers, and this one was very sour. I wouldn’t mind letting one age for a few more years. I think some time will mellow this one out.

A déguster.

Draft @ redlight redlight. Brett on the nose with citrus and very floral. Pours amber with a solid white head. Tart and citrusy with floral notes, with a citrus blossom flavor, very interesting. Very complex with a lot going on.

Really? this is 6 years old? I had it on draft at the Thirsty Monk in Asheville in December 2010. Also - An IPA? Really? It was a really nice beer, don’t get me wrong, but I got a lot of fruity, slightly sour notes in the aroma and flavor, and not much hoppy flavors. Oh well, I liked it whatever it was.

Oh wow, really this old? Well, picked up a bottle - unaware of what it was. Poured a copper color, slightly cloudy, thick head. Yeast, spices, etc. Flavor was alright - though a bit spicy for my likes.
