I always say: "When you really like a beer, you buy a whole crate of it".
And thatís exactly what this beer achieves.
Uncapping already gave flowery perfumes.
Pouring gives a creamy texture, resulting in a rich, creamy, beige colored head. A head that stays !
Creamy is the word to describe this dark beer at 8.5 vol%.
Also, what a velvety soft mouth feeling with such a dense flavour concentrations, so far away from watery beers.
I was highly surprised too with itís hoppy earthy flavours, so similar to Trappist Westvleteren 12.
A LOT of Belgian hops are used here, because the beer itself is quite sweet, and sweetness masks hoppiness so easily (similar to sweetening your coffee with the objective to lower bitterness).
Still, that load of hops was remarkable really, and in such a perfect balance with the malt sweetness. Again, the similarities with Trappist Westvleteren are there.
I also noticed some spiciness, similar to liquorice. Did I say trappist Westvleteren ?
Anyway, when youíre into Westvleteren 12, then you will sure love this Bierboom bruin.
Simply because the similarities are ASTOUNDING !!!!!

Clear red to red brown beer, big irregular off-white head, adhesive. Aroma: very bready, some caramel, sugary, sweet. MF: lots of carbon, medium body. Taste: sweet, caramel, bit spicy, little bitter, sugary, sweet malts. Aftertaste: little bitter, malty, caramel, some chocolate, little spicy, some anise, sugary, little hoppy. A shame of all the bogus ratings here, trying to alter the results of the beer. (Yes, Iím talking about you: Nathan121, JeSy, Zofo24, lani, foxtje (pretenting to be from Edinburgh, but writing the worst kind of English Iíve seen in a long time).

Reddish brown colour, beige white head. Aroma of candy and yeast. Sweet flavour, caramel and malts. Malty finish, caramel. Not quite my cup of tea.

Draught Good white head; unclear brown beer; Wood, chocolate, herbs (thyme?). Dry chocolate, dark malts, sawdust, too effacťe. Dry, attenuated, but no flavours left in the aftertaste. Starts good, ends disappointing.

This dark beer is one of my favorites at the moment. A good deep taste , a bit sweet yet you taste some bitterness. I recommend to try one asap! I canít wait to get my hands on a next crate, as Rudy told me his next brewage will be ready soon.

33cl Bottle bought at Butcherís Tears. Dark brown colour, creamy beige head. Aroma of rich malts, dark fruits, plums and figs, raisins, some nutty yeast, hops. Flavour is medium-sweet, malty, dark fruits, yeast, light spicy, nice hoppy and malty bitterness with a little alcohol touch, some chocolate. Fullbodied. Rich, tasty, complex beer, indeed along the lines of the great Trappist BSAís.

Rudi from De Bierboom (Brugge) commissioned and helped to brew this beer to his own tastes: 1,000 litres or put another way 3,000 33cl bottles from the first brewing. he intends to brew it again and some other beers too.
I first had one with Rudi the week after he launched it back in Sep 13, he said it would be more mellow and calmer by Dec13, so we agreed that Iíd have another then (now) and review/rate it rather than write about it too fresh. He sold over 1,000 bottles during the first weekend of itís launch!
Poured into a Westmalle chalice on 8th Dec 13.
Looks, smells and tastes half way between a St Bernardus Abt 12 and a Westvleteren 12: which I believe is what Rudi was after. This is a little livelier and not as smooth or rich, but it isnít a long way away in taste or aroma and a very good beer for a first attempt at brewing, even with help.
The slight aging has helped to mellow the beer; another 6 months may well improve it even more (I have one bottle left).

A sweet start followed by smooth tasting and a slightly bitter aftertaste. Taste is very similar to Rochefort 10. As a first attempt at designing a beer this is a vey good result
