Draft at Paratii Craft Bar. These guys are becoming the Lennon and McCartney of Seattle brewing. Pours a hazy dark brown with a dense, creamy, and beautiful off-white head. Sweet nose, close to a dessert beer--the apples and cinnamon are distinct, and combine with the vanilla traces from the bourbon to create a gourmet pastry effect. It’s shy of cloying, but this is clearly on the sweet side, like a sweeter tripel, though with very different aromatics. Beautiful quenching creamy medium body with lively carb. There’s a bit of residual malt sugar serving as a floor to the flavor profile, a nice chewy caramel. Drunk quickly, the flavor profile of this beer rushes to marshmallows and honey. Sipped, you can pick apart the cinnamon, apples, and vanilla fairly readily. The finish is almost a bit powdery from the cinnamon, though it’s sweet rather than dry to be sure. Probably not a beer to order by the pitcher with the game, but drinks nicely and would pair very well with many foods.
