COMMERCIAL DESCRIPTION

Big Mama Stout is brewed from 5 types of barley malt and some rye malt in combination with Summit and Willamette whole flower hops. It is then “dry-hopped” with American hops and cocoa nibs from Madagascar. Our Belgian dark beer will improve during the first year of aging by developing delicate aromas of chocolate balanced by a moderate bitterness. We recommend tasting it at cellar temperature.

Big Mama Stout est brassée à partir de 5 sortes de malt d’orge et une partie de malt de seigle en combinaison avec des fleurs de houblon Summit et Willamette. Elle est ensuite infusée à froid avec des houblons américains et du grué de cacao originaire de Madagascar. Notre bière sombre se bonifiera au cours de la première année de garde en développant des arômes délicats de chocolat balancés par une amertume moderée. Nous recommandons de la déguster à température de cave.

Cloudy dark brown color, small frothy head. Aroma of roasted malts, a bit dusty. The carbonation is too high; some dry chocolate flavor and roasted malts; correct bitterness; the body is lean, not as strong as expected; correct bitterness; in the final there is a light presence of yeast, although covered by the other components.

UPDATED: MAY 20, 2013 Bottle, bought @ Malting Pot, Brussels. Pours deep red black with a large, frothy, beige head. Aroma has lovely cocoa, dark chocolate, light sweet yeast. Medium carbonation, fine dry and light creamy mouthfeel. Flavour has good dry cocoa, light roasted, chocolate, light liquorice, fine milky notes. Lovely dry malty finish.

75 cl bottle shared with Joes, Dutchdrebus and Martinus. Deep dark red color, medium to full sized decently lasting beige head. Smell roasted malts, lightly cocoa, chocolate. Taste malts, cocoa, roastyness, bitterness. Nice but a bit thin. Low to medium body, a bit too much carbonation. In the end I’m disappointed.

Bottle @ benzai thx to benzai. Dark brown with a huge light brown head. Smells ash, roasty, tar, some cocoa. Tastes roasty, chocolate, some coffee, raisins. Medium body, soft carbo.

750 ml bottle. Served in a snifter, the beer pours dark brown with a couple inch light tan head. Head retention is good, and there’s a decent amount of lacing. The brew smells like dark fruit, chocolate, roasted and burnt/charred malt, and a bit of caramel. It tastes like bittersweet chocolate, burnt/charred malt, herbs and a bit of licorice. Mouthfeel/body is medium, it’s a little slick and has very high carbonation. The high carbonation hurts the drinkability of this beer at first, but it does settle down some after a while. It’s a decent roasty stout, and it’s worth trying.

Clear dark red brown colour with a large to huge, creamy - frothy, good lacing, fully lasting, off-white head. Aroma is moderate to heavy malty, roasted, chocolate, cacao, moderate hoppy, grass. Flavour is moderate to heavy sweet and bitter with a long duration, roasted, chocolate, cacao, funky, light licorice pouder. Body is medium, texture is oily, carbonation is soft - fizzy. [20121024]

75cl bottle. Dark brown with very big tanned head. It’s not easy to open this beer without spoiling the half of it on the floor. Nose : rich notes of burned malts with dominating black chocolate, dairy, toffee, cheese and nuts. Some honey and flower notes. Sip : medium body with cream like texture. Low carbonation. It’s a sweet beer with quite distinguished cocoa flavor. Got some other flavors balanced in like burned malts, toffee and honey. The alcohol content is warming. Ending is mostely sweet, burned and a bit earthy dry but dominated by black chocolate like feeling. The beer is quite delicious. I even hate it more that I lost half of it on the floor.

Bottled. Dark reddish Brown coloured. Dense beige head. Aroma: Chocolate, Cocoa, grass, sweetness. Flavour:Fruits, chocolate, roast, Cocoa, herbs, sweetness, vague liqourice. Medium to full bodied. Ends chocolate and roasted bitter.

Bottle at yespr. Hazy red-brown coloured with a medium sized beige head. Sweet and light roasted aroma of dark chocolate and hay. Sweet and light roasted flavour of dark chocolate and hay. Light roasted finish.
