This is our Tripel recipe re-fermented with tart cherries from Michigan then aged in an oak barrel with a wild yeast strain for a complex flavor that complements the cherries. 8.5% ABV

12oz Bottle. Nice krieked sour ale aroma, rich brett cherry pie, and creamy wildness. Great funk and cherry. Great! Pours a clearish rose colored, with water-colored fringe. Not much head. Flavor is nuts. I’ve never seen cherry this complex. An amazing run of cherry juice, deep pie crust, and an intense rich almond I would never have imagined that I would seen in the beer. Subdued sweetness and light funk. Finishes on this incredible, distinct white chocolate flavor. A touch of oak. Amazing mix of fruit, malt, barrel and alcohol. Intense! Brett funk melds so well. Carbonation works well. Vanilla makes an incredible fruit flavor. Tremendous balance, great barrel, great fruit, awesome flavor and the right level of funk. Soft and not harsh, which makes it amazing. Woo hoo! Thanks Sean!

Bottle at the pre-DLD hotel tasting thanks to artusory! Poured translucent pinky-amber with a light ring of white head. The aroma had a nice sour appeal with cherry skins, vinegar, and some grassy notes.. the back picked up some green apple and a hit of oak. The flavor found dry, dusty cherry skins with some grains and green apples.. mostly sour with nice balance, but not much traditional tripel character (I’d classify it more along the lines of sour ale).. reminded me of New Glarus Unplugged Belgian Quad. Tart and puckering on the palate, but not to the extent of Cantillon or Russian River.. overall dry and refreshing with the alcohol coming through later. Solid stuff.

12oz bottle, courtesy of artusory. Thanks, Ryan! Pours a hazy, dark watermelon color; minimal head formation. Cherry / red fruit juice, a touch of tartness, and plenty of fruitiness in the aroma. Medium mouthfeel: chewy, sugary cherry / watermelon juice, some fruity tartness with a touch of citrus and basic sugar; drinkable, mildly tart fruit beer. Medium finish, showing sugar, fruit juice, and cherries.

Aroma is acedic, sweet cherry, with some malt backbone. Taste is sweet cherry, some pine, more cherry. Decent.

On tap: The aroma is rather strange for a Tripel. It consists of cherry and faint apple, but also a piney quality to it that seems out of place. It’s a reddish-orange with a small white ring for a head. The flavor starts with a quick dose of sweet cherries that quickly fades to sour cherry. The finish has some mild pineyness and moderate alcohol.
