A collaborative brew with Kevin Watson from Allagash Brewing Co. in Portland, ME. A crisp, delicately balanced golden-straw colored pale ale that begins with a hit of Simcoe hops and ends with the smoothness of Liberty and Northern Brewer. O.G. 14.5 Plato, 5.5% ABV

On tap at the brewpub. Pours hazy gold with a big white head. Has a clean lavender aroma. Creamy palate. Has a great malt sweetness. there’s also some lemons here. Smooth and mellow bitterness that lingers on the tongue long after the last swallow. Delicious.

Tap at Brouwer’s. I’ll try something of Bill’s whenever I get a chance. Pours gold, with a smallish, slightly soapy white head. Some really aromatic floral / herbal hops counter the traditional caramel malts in the aroma. The flavor isn’t quite as intriguing - the malt presence is really, really light, and this ends up lacking a bit of flavor. I’m sure this is a good example of the style, but the east coast has nothing on Northwest pales. It’s tasty, but I’ll take a pint of Meerkat any day of the week.

Taster - Big Time Brewery - Seattle, WA
Aroma – Once again Strong with hops, with a light pale malt background.
Appearance – Golden Yellow color, clear with a thin head.
Flavor – Lots of earthy hops in the flavor. Has a nice malt flavor also. The hops are strong.
Palate – Nice sharp Mouthfeel, good texture with a nice dry hop finish.
Overall – This was a nice east coast pale ale with a strong snap of hops in the flavor and nose. This is a IPA persons bar. They will love there IPA’s 4 today.

Cloudy banana-bronze and slight head. Surprisingly nice aroma, well-rounded passion-fruity bubblegummy simcoe notes immediately detectable. Rather harsh raw hoop flavor and parching finish.

Both draft and cask-conditioned at the brewery.

This collaboration between Bill Jenkins (Big Time) and Kevin Watson (Stone Coast; formerly Far West) pours a nice hazy gold with the expected white head. Nice balanced hop aroma, mild grapefruit, some hints of wheat. Biscuity malts and again that wheat flavor under a lovely hop profile composed of grapefruit and honeydew melon. It’s nice on tap, but divine on cask; the latter has a lovely creamy smoothness that brings out the solf, almost sweet hop juices beautifully. It’s like a hop-flower gelato (Hey, here’s a thought: Why doesn’t someone make such a thing? There’s gotta be a market!).

Superb beer. It’s not an APA that wants to be an IPA, it’s just a great APA that pays serious tribute to its hops. I adore the Big Time for letting me walk in off the street, on the way home from work, and sample experiments of this exceptional quality.
