COMMERCIAL DESCRIPTION
Anticipated throughout the fall and released on December 1st each year, Old Wooly is Big Time's biggest and rarest beer. It is always powerfully malty with a prodigious amount of hops for balance. In addition to Northwestern 2-row pale malt, English Crystal, Munich, Carastan malts are used along with just a touch of roasted barley for a slight dryness and additional color. Old Wooly is bittered with Yakima Nugget hops and finished with Cascade and Centennial. Only 7 barrels of Old Wooly are brewed each year in late June. The beer is aged in our cellar until the 1st of December and then put on tap at the pub until it's gone. Starting gravity from 22-24 Plato and alcohol 8.5 to 9.5 by weight.

Bottle thanks to bu11zeye. 2008. The smell is caramel, toffee, alcohol, and fruits. The look is amber in color with a beige colored head. The taste is caramel, alcohol, fruits, and toffee.

(22oz bottle, 2008 vintage) Pours a hazy burnt orange body with a spare off-white head. Aroma of caramel, toffee, florals, raisins, and old books. Flavor of caramel, apple, raisins, brown sugar, and toffee with a dry, somewhat bitter finish.

22oz bottle from megamaltman me thinks. thanks for the bonus!.... pours a murky and mostly cloudy unfiltered apple cider brown with a barely existent just off-white head... aroma of thick chewy caramel malts and dark fruit. almost syrupy and cloying even for just the aroma... flavors very much on par with the nose with an even sweeter sacharine and brown sugar followthrough. low to medium carbonation with a semi-full mouthfeel. if you are into sweet caramel and dark fruity barleywine, this might be up your alley. 7/3/7/3/13

2008 bottle thanks to bu11zeye. poured amber with an off white head. aroma was caramel, raisin, and slight pine with the flavor following the nose.

(22oz bottle 2008 vintage thanks to bu11zeye) Pours clear deep orange with nice carbonation/bubbles on top. Nose of sweet caramel, raisin, honey. Taste of caramel, raisins, honey, rum, with a nicely creamy well carbonated finish. Medium body. Great!

2008 Bottle thanks to bu11zeye. Pours with a hazy brown body and a small, fading head. Aroma of faded hops, caramel, raisins, fruit, tea. Taste is molasses, hops, caramel and toffee. Syrupy mouthfeel. Very nice.

UPDATED: JUN 13, 2012 2008 bottle. clear dark rust colored body. heavy caramel malt nose with a mild cheesecloth yeast presence. hops are somewhat faded but still present a dry pine needle and burnt orange rind aroma. moderately thick with soft and silky carbonation. malt texture is smooth and silky while alcohol is well-placed. strong presence of bread crust malt and burnt orange hops. scorched honey and sugared vegetables both present. fits in nicely with the classic american barley wines.

2009 Bottle as an extra in a trade. A - pours a deep copper, caramel when held to the light. A thin sheet of khaki head rises and leaves moderate lacing. S - Hops! This is hoppy-er than fresh Bigfoot or Old Ruffian. Caramel, malts, and alcohol fill in the rest. T - Starts with a nice caramel malt which falls into the nice hop finish. With a little less alcohol in the taste it would be my favorite hoppy barleywine. M/D - Not much carbonation and a little thin in the mouth. Drinkability is pretty great once the glass warms and the alcohol balances back in. This would be a good cellar candidate for a year or more.

2008 Bottle:   Rich amber in color, faint haze, small sudsy off-white head, spotty lacing.   Soft rind on the nose, a bit of alcohol as well.   Has a slight astringent floral tinge as well, almost pefumy.   Probably the alcohol.   Warming on the tongue but not biting.   Malty, a good deal of malts which I like.   The mild sweetness balances out well.  Not big on the hops, which is good.   Body and mouthfeel are moderate to full.   Clean finish, remains malty with an alcohol sided citrus rind flavor.   This one is fairly tasty fresh, and I can only imagine it getting smoother over the next few years.   My kind of Barley Wine even if a little alcoholic.
