COMMERCIAL DESCRIPTION
Anticipated throughout the fall and released on December 1st each year, Old Wooly is Big Time's biggest and rarest beer. It is always powerfully malty with a prodigious amount of hops for balance. In addition to Northwestern 2-row pale malt, English Crystal, Munich, Carastan malts are used along with just a touch of roasted barley for a slight dryness and additional color. Old Wooly is bittered with Yakima Nugget hops and finished with Cascade and Centennial. Only 7 barrels of Old Wooly are brewed each year in late June. The beer is aged in our cellar until the 1st of December and then put on tap at the pub until it's gone. Starting gravity from 22-24 Plato and alcohol 8.5 to 9.5 by weight.

Thick oatmeal cookies, berries, light spicing (nutmeg?), centennial hops? definite citrus character. Fairly malt forward despite hops being very apparent. Nicely balanced aroma. Clear brown body is topped by a low off white head that recedes slowly to a partial cover with some sudsy lace. Tannins, berries, candied and biscuity malts, orange citrus hops and thick, chewy toffee blend nicely with moderately strong bitterness. Medium full body with moderate carbonation and fairly strong alcohol warming. Bottle (2005 vintage) enjoyed with Francois, MartinT, Olivier_MTL and Rastacouere.

Bomber from riversideAK. Nose is toffee, golden raisins, brown sugary sweetness, and some floral hoppiness. Cloudy rusty orange with a small light beige head. Flavor is toffee, hints of molasses, some alcohol, and light bitterness.

Draft @ brewpub. Rusty brown, nice head and delicate lace. Aroma is fermented fruit skins, apple and plum, Campari and booze. Intense and heady. Bittersweet profile orange peel, Campari, alcohol, finishing surprisingly clean. Good American barley wine.

Bottle shared by Sarah, thanks! Pours a near clear red with an amber hue and an off white head that dissipates quickly to the edges. Aroma has notes of toffee and sweet bread with a hint of alcohol and caramel. Flavor is a combination of caramel and sweet bread with a bit of warming alcohol in the finish.

On tap at Big Time on release date. Place was packed. Poured into snifter. Dark amber, with a nice lacing. Smells malty with a decent hop aroma. Little bit of pine and a little bit of booze. There was a really nice sweet tang going for it, minimal alcohol burn. There was still some carbonation for it as it wasn’t aged too long. I could see this getting more complex with age. As it stands it was pretty good.

A: The beer pours a hazed dark amber color with a small off-white head. S: Toffee and brown sugar aromas with a definite oxidation to it. Mild citrus notes as well some additional sweetness of caramel malts. There’s a light floral note to it and maybe a touch of booze. T: The flavor is primarily sweet, sugar notes with a flavors of caramel, toffee, and brown sugar. There’s a light toast note as well as some citrus peel and some floral and spicy hop notes. Not as oxidized as the aroma, but still some. M: Medium bodied with medium carbonation. O: Had some good traits, but definitely oxidation was not helping here.

’09 bottle from John - thanks! Hazy caramel brown in the glass with a slick of brown foam. Aroma is deep sweet malt/raisin/barley wine with thick faded hops and even slight fruit component. Touch oxidized in the taste but otherwise a strong, malt heavy and sweet traditional barley wine. This was probably far better fresh but it’s a very solid traditional barley wine nonetheless.

Many thanks to Eric for the 2008 bomber! Poured clear garnety-orange with a short, dense cap of beige head. The aroma was rich and decidedly malty with aged caramel, molasses, and biscuity notes represented.. dark fruity notes danced around the nose.. smelled like it was going to be sweet and satisfyingly warming. The flavor opened with slow-moving molasses and caramel malts, rolling onto some darker fruit, figs, and more molasses at the core.. a little malty tartness and peppery alcohol around, but the hops were long gone.. tangy, warm finish.. tasty stuff! Heavier-bodied with low carbonation on the palate.. slow-moving and belly-warming.. my only complaint is that I only had one bottle.

Courtesy of bvc. This 2009 bomber pours crystal clear amber with ruby hues and off white head. The aroma is a bit boozy and also has notes of caramel, dates, some earthiness and molasses. The taste is smooth sweetness from rich honey, caramel and molasses followed by pine hops, some malts, dates, prunes, raisins and slippery spicy hops. This is one yummy barleywine.

Thanks IBrew2or3 for the share. Pours translucent amber with an off-white head. Nose is malt, toffee, raisin, booze, and slight acetone with hops. Flavor is similar with hops all over. Finish lingers with toffee, malt, and hops.

2008 vintage. Bottle thanks to BVC. Pours a dark red color with a thick beige head. The aroma is rich berries, lots of huge malts here. A similar flavor to Uinta’s BW, and that is high praise; sweet and fruity, very dry rich malts, huge caramel. Very drinkable and pretty warm. Lovely.
