Also called “Monk’s Café Flemish Sour Red Ale”

We blend young and old beers to make this mildy tart sour ale. Light bodied with a lactic/sour nose and a bit of sweet and sour in the finish. Very refreshing!

Pours a dark red color with a small beige head with minimal lance. Aroma is lightly tart, subtle red grape and cherry notes and brown sugar. Flavor slighlty tart, cherry and apples. The body is light with a dry mouth feel, sour , milky flavor are more obvious at the finish.

Poured from a 12 oz can into a tulip glass. The appearance showcases a thin fizzy off white head. The color is a ruby brown similar to cola. The aroma opens up with cherry and cranberry some herbal notes to add. The flavor is starts with sweet cherry like notes with toast grain at the base. In rings the sour with cranberry/cherry tartness on the tongue with a hint of black pepper. Almost like a carbonated Pinot Noir rose. Very delicious sour to have with pork dishes.

For the book. Aroma is sweet, apples, raspberry, woody, not tart or sour. Appearance is red brown, light tan head, mostly clear. Taste is apples, raspberries, wood, slight tartness, mostly sweet though. Mouthfeel is light to medium body, light crisp carbonation, woody aftertaste. Overall, meh. Another book failure.

Bottle share. Pours a clear reddish amber with bubbly tan head with some retention. Nose of dark fruit, a bit of funk; some caramel and a lot of dried fruit sweetness, a bit tart, a bit sour ("almost like eating a bowl of limes"). Very pleasant and refreshing.

I have had this as Monk’s Café Flemish Sour Red Ale and the Bios version...Pours a reddish brown color. Aromas of dark fruit, yeast, and a touch of wood. Flavor is sour cherries, yeast, wood, and a couple of sweet tarts.

Dark reddish hue with a large off white head. Aroma is mildly sweet fruit with slight sour notes. Flavor is tart up front with a fruity sweetness underneath. Mildly cloying, but not bad.
