Leo, Teo e Sam sono andati alla ricerca dell’origine della birra, ricreando un’audace ricetta ispirata alle antiche bevande fermentate. Usando ingredienti comuni sulla base dei ritrovamenti archeologici ogni birrificio ha scelto un metodo di fermentazione diverso. A Borgorose, l’Etrusca, l’abbiamo fatta riposare in grandi anfore di terracotta, come quelle ritrovate negli antichi siti etruschi

Using ingredients found on archeological sites (different cereals, hazelnuts, raisins, pomegranate, resins, honey), this project is supervised by Patrick McGovern (university of Pennsylvania).
At Del Borgo the beer is fermenting in clay amphorae.

Amazing beer. Definitely doesn’t like piss or white wine. Closest for me would be an excellent Geuze like Boon’s Mariage Parfait, but with honey! Mind you, it’s a smidgen. Color is apricot orange. Finish is tart and bitter with a sweetness on the lips. Full, lasting palate: by no means thin. To be had again.

Yellow of color with a white head. An aroma of sour milk, yoghurt, sour and raspberries. A flavor of sour malt, raspberries, sour milk, dry and no sweets.

Bottle @ fonefan tasting. Clear golden with a white head. Aroma is sweet, malty, honey, bretty and yeasty. Flavor is quite sweet and moderate acidic. Dry and moderate acidic finish. 050714

330ml bottle from Archive Beer Boutique 261013. Big alcohol wack precedes this unusual beer. One of the more interesting beers I have had in a while.

Color anaranjado tupido, casi sin espuma. Aromas especiados, aguamiel y alcohol. Cuerpo muy denso, textura melosa, inicio dulce que pasa a una acidez cítrica y acaba con un toque especiado y algo alcohólico. bien, pero difícil de beber

Bottle from Taniguchi. Very tangy, citrus nose, acidic, yogurt, very fruity and interesting. Raisins and honey. Deep honey gold, lace. Very tangy, sour really. Lemon and orange and yogurt, raisin, honey. Interesting stuff. A bit funky. Tart and refreshing, definitely hides the alc. Quite nice. Sour and complex.

0.33l bottle @ Baran. Not much of a head on this one. The little translucent thing that was there on the pour quickly fades. The beer itself looks slightly clouded and kinda dark orangy golden. Smells of sour olives with tones of honey bees, sour woods, sour red berries, and it’s almost salty in a way. Lots of unique aromas here and I’m quite enjoying it. It’s really soft on the bubbles almost what you can call flat and it has a thick oily feeling in the mouth. Reminds me a lot of a Flemish red. A good amount of woody white wine grapes also. Combined with sour green apples? Lots of interesting stuff going on here. Would not mind having this again! 28.02.2014
