After the Equilibrista, our beer inspired by the Champagne world, here it is a new experiment on the “wine meets beer” theme. This time, though, we tipped the scales in favour of beer, adding to the Duchessa wort only a 25% of wine must: in this case we used Malvasia (coming from our friends of Tenuta di Bibbiano, as usual), a white, aromatic grape variety which gives the beer a gentle and nice sharpness and an inusual, fruity nose. The beer is bottle-fermentd using Champagne-yeasts, and it has a quite intense “perlage” (bubbles) that makes it perfect as an aperitif or even for the whole meal. The “chaotic” label was designed by Valentina De Luca, an Art student at the Istituto d’Istruzione Superiore Antonio Cederna of Velletri (Rome), who won our contest “Etichette Bizzarre”.

Bottle, thank you Mark. Pours murky amber with almost no head. Aroma of yeast, champagne, funk, malts, dried fruits, abricot. Taste is light tart, moderate sweet and bitter, yeast, dried fruits, vinous. Light bitter, dry ending. Not bad.

Tap at Iron Abbey. Clear honey color no head. Mild aroma. Musty, dry, hint of tartness.

On tap @ Dirty Water. Hazy orange beer with some soapy white foam. Smells of tart apple cider, green grape, and champange vinegar. Interesting combination... There’s a fair bit of yeast quality to it as well. Comes off a touch sweet at first with a drying, acidic finish. Interesting enough, but not great.

Lightly opaque golden color, no head. Mildly musty grape, slight tartness. Pretty dry. Not particularly acidic. Very crisp light body, short finish. Very effervescent. Good.

had on draft, 6oz glass, at the avenue, ’15 .. . tartness level is mild, spritzy active mouth .. mild wood, citrus rind, & starry yeast .. . low foam .. not bad but a novice take .. . . look at the picture of the kittens in a barrel. look at them, they’re having a whale of a time.

On tap at Tørst. Pours a clear amber with a thin white. Sweet musk with a hint of fruit and a bit herbal, isopropyl. Medium bodied, tangy and lightly sweet, malt and warm old fruit. Long acid, fruit and musk. Interesting.
