COMMERCIAL DESCRIPTION
Oyster Stout
Si chiama Perle ai Porci ed è una Stout realizzata con l’impiego di ostriche. Avete capito bene, proprio ostriche, utilizzate in grande quantità per regalare alla birra aromi e profumi davvero unici. Per quanto possa sembrare stravagante, l’uso di ostriche nell’arte brassicola è una soluzione ben conosciuta, che in passato ha dato vita a un sottostile preciso: quello delle Oyster Stout. La nostra Perle ai Porci si ispira proprio alla ricetta classica: abbiamo aggiunto la bellezza di 15 kg di ostriche su un totale di 500 litri di mosto. Ostriche buonissime, tra l’altro: Fin de Claire N2, arrivate a Borgorose direttamente dalle coste della Bretagna.

Black color; creamy head. Mild aroma of roasted malt, with a metallic feeling (maybe the iodine). Good body and smooth mouthfeel; roasted malt, but without ashy character and excess; the mouthfeel becomes drier in the end, with stronger chocolatey and roasted notes; a bit salty.

Bottle, 33cl. A really dark brown beer, next to black, and topped by a small, dark beige head. The aroma has lots of lovely chocolate, with some coffee, dark dried fruits and a hint of cocoa. It’s full-bodied and soft on the palate, nicely carbonated, and with chocolate, roasted malts, toast and a little cocoa hint in the flavor. Not much hoppy bitterness going on. Lasting chocolate and cocoa finish with a tar hint. A faint metallic touct too. In a way, nothing extraordinary going on here, but it’s a damn tasteful and plesant stout anyway. 140514

Bottle, bought @ LIVA, Kolding. Pours black with a small, creamy, off-white head. Good duration. Aroma has roasted malts, dark chocolate, light salty. Medium carbonation, fine dry and light creamy mouthfeel. Flavour has liquorice, salty, roasted. Lingering malty and salty bitterness. A very elegant beer.
