On cask at the Birreria at Eataly. Pours a light hazed gold with a medium sized white head. Gentle hops, very light dusty thyme. Bitter, smooth, light herbal notes. Soft bitterness. Another very delicate beer. Thyme gets lost rather quickly in the long bitter finish. A bit shallow at times, but still decent.

On cask at Birreria. Pours a hazy burnt orange with a small head that holds up for a while. Smell is floral hops with sweet lightly caramelized malt and the slightest hint of thyme. Taste is a flavorful lightly caramelized malt with herbal floral hop flavors and just the slightest hint of thyme shines through. Mouthfeel is medium body with a mild carbonation. Overall the thyme adds a lovely layer of complexity without being intrusive or singular in flavor.

Cask: A hazed amber ale with a thin lacing off white head. In aroma, a nice fruity ester malt with fragrant floral hops, thyme, very nice, smooth, and classy. In mouth, a nice herbaceous biscuit malt, with nice floral hops, thyme coming out well, if subdued, very well balanced. On tap at Birreria, Dec. 27 2011.

Flavors are of thyme, herbal, herbaceous, hoppy, medium bitter, dry and floral. Some malt backing. Lasting citrus. Light carbonation. Dry finish. Very interesting and pretty tasty.

Cask. Lively beer, lively aromas. Heavy thyme and, although I like the herb and cook with it often, I couldn’t quite get used to it here. It isn’t vegetal at all, but thyme makes the APA savory and gives it an unexpected dimension. This is a good thing in as much as it makes the beer interesting, and the hops are a pleasant companion (adding lemon, mowed grass, touch of soap). On the other side, it really narrows the focus of the beer and makes it tougher to pair with certain foods. If you’re sampling lots of the fare at Birreria, treat the Gina as a before-meal beer or pair with charcuterie. It will overpower some of their delicate dishes.
