COMMERCIAL DESCRIPTION
A blend of New Morning and 18 month aged 3 Fonteinen Lambic refined for at least 12 months in bottle. It has a surprisingly citrus nose of leather, cellar and animal with hints of dried flowers and honey. Lasting and sapid in the mouth with a sour finish that always makes the lovers of this blend smile.
This beer could very well make you develop an addiction for spontaneous fermentation and turn your entire world upside down!

After a mechanical breakdown, 3 Fonteinen Brewery of Beersel (possibly the best Lambic blender in the world) had economic damage in the summer of 2009. The news caused such a stir in the International beer movement that I called Armand to know how things were. As he needed to sell his Lambic, I immediately got inspired to blend our New Morning with his beer. We selected three 18 month old Lambic barrels that we siphoned in a small tank on our truck. The journey back was long and hard, myself and Manuel took turns driving through Belgium, France and Italy only stopping for gas. After days hand bottling and months of maturation, the outcome has gone over and beyond our expectations and we can say with pride that it was worth it!

Bottle at The Italian Job , Hammersmith, Saturday 2nd May 2015 Hazy light /mid gold with a lively white frothy head. The nose is really alive, fresh, zippy and clean. Despite the funky, tart, fresh lambicy elements coming to the forefront you can still pick out the base beer, it is a great blend. Some background sweetness, lightly sour, fruity really refreshing, great beer. A8 A4 T9 P4 Ov17 4.3

Bottle at VBC. Yellow and pale. Sour aroma with notes yoghurt, pineapples and hay. Reminds of lhassi, lambic and sweet love

VBC 2015 hazy yellow of color with a white head. A Sour aroma with pineapple, sour, sour milk and vinegar. A flavor with pineapple, sour milk, weak sweets, fruity, exotic fruits and weak horseback.

Bottle share at VBC. Hazy yellow with a quickly fading white head. Great pineapple, sour aroma. Low bitterness, no hop flavour. Really complex flavour as we know and love from 3 Fontainen.

Keg in Lambiczoon, Milan. A nicely blended beer, actually quite sweet and fruity with a restrained sour background. Pleasant enough, but I kind of need sour beers to be either challengingly tart or quenching and I’d prefer a ’nice’ beer to be not sour.

Bottle, this is lambic blended with a base beer which is a sort of witbier with green peppers and some flowers in it. The base beer is actually not as bad as it seems but it clashes with the lambic here, certainly not bad, easy to drink, but the pepper notes detract form the firm sourness creeping through.

On tap at the Jeffrey, hazy golden body with light white head. Sour nose with yeasty esters and floral aromas. Funky taste with tart peach and lemon flavors. Spicy finish with slight wood notes. Prim looking stargazer.

Tap @ Bishops Folkis. Cloudy yellow, huge thick creamy white head that lace the glass. Ooh, very nice bretty funky aroma with grapefruit rind, apples, wet wood, damp cellar and some cat piss. Very nice! Taste is citrus, apples, hay and some brett. A bit dissapointing cause I actually thinks it could have been a bit more sour. Medium, soft, slight oily to dry. Very good aroma, but flavour dorsn’t match.

Bottle, 3 years old. Amazing nose of 3F lambic plus saison: lemon, grapefruit zest, leather, old books, lightly malty. Pretty clear amber, persistent head. Lambic flavor, yet more mild, bit of biscuity malt, wheat, orange, quite a bit of sweetness, but with the horse blanket funk underneath, and just enough acidity, plus some interesting spice. Maybe a touch too much residual sweetness, but damn good all around.

Bottle during RBWG. Pours a cloudy orange with no head. Fruit cereal malt and yeast aroma. Medium mouthfeel with a nice funk, grass, and light tartness. Really good.
