A blend of New Morning and 18 month aged 3 Fonteinen Lambic refined for at least 12 months in bottle. It has a surprisingly citrus nose of leather, cellar and animal with hints of dried flowers and honey. Lasting and sapid in the mouth with a sour finish that always makes the lovers of this blend smile.
This beer could very well make you develop an addiction for spontaneous fermentation and turn your entire world upside down!

After a mechanical breakdown, 3 Fonteinen Brewery of Beersel (possibly the best Lambic blender in the world) had economic damage in the summer of 2009. The news caused such a stir in the International beer movement that I called Armand to know how things were. As he needed to sell his Lambic, I immediately got inspired to blend our New Morning with his beer. We selected three 18 month old Lambic barrels that we siphoned in a small tank on our truck. The journey back was long and hard, myself and Manuel took turns driving through Belgium, France and Italy only stopping for gas. After days hand bottling and months of maturation, the outcome has gone over and beyond our expectations and we can say with pride that it was worth it!

Cloudy pale color with no head. Aroma is funky lemon, hay, leather, and pear. Taste is very mild tart and fruity but not really what iwas expecting. Funky but not very tart.

Draught at Ottakringer Braukulturwochen, Vienna.
Pale yellow, cloudy body, with a massive, stable, creamy, lacing, snow white head.
Wonderful, smooth aroma of barnyard, Brett, lemongrass, ripe and dried fruits, berries, vanilla, oak.
Tastes of sour citrus, lemongrass, barnyard, spices, green apples, oak, some cheese.
Medium, slick mouthfeel, with a lively carbonation.
Finishes smooth, medium sour, dry, wooden, fruity.

Delicious! Very fresh and pretty easy, while still really complex and aromatic. Especially the nose is really lovely. Great balance, very smooth, the sourness isn’t overpowering, there is also room for sweet notes and oak. Pretty much how I like a sour ale.

Appearance: Hazy yellow colour with a bubbly white head.
Aroma: Mild, sour, spices, funk, fruit.
Body: Medium body, lively carbonation.
Flavour: Mild, sour, some fruit, grapefruit, funk, yeast.

Shared bottle@HBF2015. Opaque golden color, full white head. Appealing sour aroma. Surprisingly balanced flavor with lemon and butter. Medium body, medium-low carbonation. Could work well with seafood?

Pours hazy amber with a large head. Nose shows heaps of funk, elderflower, herbal notes and spicy phenols. Flavours include some acidity, more herbal notes, spicy saison-like farmhouse characters. Carbonation is too high.

Draught at Owl Farm NYC. Aroma of horseblanket, clear 3 Fonteinen funk, lemon, yoghurty, slightly woody with earthy, leafy, and small leather touch to it. Taste is more saison, a bit tropical fruit and the funk disappears to a more floral bouquet, peach, apricot, with clear lemon in the front. This is very well made and drinkable.

Bottled at Bishops Arms Folkungagatan, Stockholm. Cloudy golden, small head. Tart nose with lemon, thai basil and hay. Dryish with medium body and well rounded mouthfeel. Citric with milk and thai basil Slender and elegant. Mid bitter finish. Unique and tasty.

Bottle. Hazy glowing orange liquid with medium white head. Aroma of lemon, apple skin, light lacto, light wood, mineral, light wood and light grain. Taste is very light sweet and light to medium sour with notes of lemon, apple skin, barnyard and light grain. Medium bodied with medium to high carbonation. Really nice. The 3F lambic shows through.

Hazy light orange amber, frothy off white head. Aroma of light but tart fruit, geueze light. Light body, flavour is fruity and puckering.
