A blend of New Morning and 18 month aged 3 Fonteinen Lambic refined for at least 12 months in bottle. It has a surprisingly citrus nose of leather, cellar and animal with hints of dried flowers and honey. Lasting and sapid in the mouth with a sour finish that always makes the lovers of this blend smile.
This beer could very well make you develop an addiction for spontaneous fermentation and turn your entire world upside down!

After a mechanical breakdown, 3 Fonteinen Brewery of Beersel (possibly the best Lambic blender in the world) had economic damage in the summer of 2009. The news caused such a stir in the International beer movement that I called Armand to know how things were. As he needed to sell his Lambic, I immediately got inspired to blend our New Morning with his beer. We selected three 18 month old Lambic barrels that we siphoned in a small tank on our truck. The journey back was long and hard, myself and Manuel took turns driving through Belgium, France and Italy only stopping for gas. After days hand bottling and months of maturation, the outcome has gone over and beyond our expectations and we can say with pride that it was worth it!

Extremely hazy orange color with white head. Brett lambicus aroma, good funk. Taste is much smoother than lambic, a bit honey, flowery, not nearly as distinct. Very well balanced and easily drinkable. I like it!

Poured from a bottle. Aroma is initially funky with a nice lambic character. Medium light citrus and stone fruit notes. Moderate phenolic notes with some herbal, spicy notes. Hints of mint and tropical fruit. Pours a hazy, pale yellow orange with a large, white, pillowy head with decent retention. Moderate lacing and small legs. Flavor has a medium light acidity with some light citrus notes. A moderate earthy barnyard funk with some medium light herbal notes. Light stone fruit and tropical fruit. Nice mineral notes with medium bitterness. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth with a bit of a creaminess. Overall, a pretty nice beer but I would prefer a lambic. This does add some nice complexity to a saison though. More fruitiness and less barnyard funk as it warms.

Tasted during Nepenthia. Labeled "Beersel Mattina". Tap sample. Hazy golden orange color. Little white head. Loose dot of lace. Medium-plus body. Smooth, lighter carbonation. Light dry finish. Nice biscuity breadiness, kind of mild bitterness. Some spice and floral. Moderate sweet, light bitter. Tasty.

Bottle. 6.2%. Best before 01.06.33. 10 cl. sample. Pours a hazy, pale yellow with a white head. Dry, sour, fruity aroma. Well-balanced. Sour and fruity flavour, with a spicy note and a hint of wheat. Peach not as it warms. Dry finish. Bit too much carbonation. Overall quite nice and well-balanced. 01.05.15.

Bottle at The Italian Job , Hammersmith, Saturday 2nd May 2015 Hazy light /mid gold with a lively white frothy head. The nose is really alive, fresh, zippy and clean. Despite the funky, tart, fresh lambicy elements coming to the forefront you can still pick out the base beer, it is a great blend. Some background sweetness, lightly sour, fruity really refreshing, great beer. A8 A4 T9 P4 Ov17 4.3

Keg in Lambiczoon, Milan. A nicely blended beer, actually quite sweet and fruity with a restrained sour background. Pleasant enough, but I kind of need sour beers to be either challengingly tart or quenching and I’d prefer a ’nice’ beer to be not sour.
