A blend of New Morning and 18 month aged 3 Fonteinen Lambic refined for at least 12 months in bottle. It has a surprisingly citrus nose of leather, cellar and animal with hints of dried flowers and honey. Lasting and sapid in the mouth with a sour finish that always makes the lovers of this blend smile.
This beer could very well make you develop an addiction for spontaneous fermentation and turn your entire world upside down!

After a mechanical breakdown, 3 Fonteinen Brewery of Beersel (possibly the best Lambic blender in the world) had economic damage in the summer of 2009. The news caused such a stir in the International beer movement that I called Armand to know how things were. As he needed to sell his Lambic, I immediately got inspired to blend our New Morning with his beer. We selected three 18 month old Lambic barrels that we siphoned in a small tank on our truck. The journey back was long and hard, myself and Manuel took turns driving through Belgium, France and Italy only stopping for gas. After days hand bottling and months of maturation, the outcome has gone over and beyond our expectations and we can say with pride that it was worth it!

Bottle at Cafe Sara, september 17th 2015. Unclear orange body, white lacings. Aroma is sour with malt, citrus and pepper. Taste is tart, woody, quite funky. Astrigent finish with a lasting lactic sourness.

Tap@TCBW16. Pours hazy yellow, white head. Aroma is nice, sulphur, sour, raw apples, some malty notes. Taste: medium+ sour, sulphur, malty, raw apples, cider notes- nice.Sour finish.

Nice slightly fizzy-creamy mediumlasting head, hazy. Aroma is mild sour-ish, weeds, soda powder, sour grass, citrus peel, grass, minerals, hay, light malts, flowers, spices. Taste is mild sour-ish, soda powder, grape juice, sour grass, minerals, hay, flowers, light malts, citrus peel, bark. Medium bitterness, slightly dry mouthfeel. Nice.

Bottle. Hazy straw-hued golden body with a large bubbly head. Nose is mild funk, straw, lemon juice, hay and hints of grape peel and white pepper. Taste is lemon, straw, pepper, herbs and hints of grape peel, hay and pears. Light body, high carbonation. Nice and drinkable sour with a smooth, herbal-spicy touch.

Smells like a proper lambic. Tastes like a proper lambic. Feels like a proper lambic. Yeah, that’s nice. Particularly like the gently bretty funk and apricot in the aroma, and soft but crisp sourness in the mouth. Want more :-). Didn’t know there was any 3F involvement in the beer at the time, I’m glad I liked it even to the extent of drawing the smiley.

After having a whole pile of nasty modern sour shit, I said "fuck it, I’m having the good sour again", and Anna went back to get another of this. Just as good as before, if not better, and a million miles away from all the MSS. A beatiful lambic aroma and taste, soft and so easily drinkable, so moreish and refreshing. Thank you 3 Fontainen for knowing how to make a proper spontaniously fermented beer.

Tap sample at Tallinn Craft Beer Festival. Dusty, woody, soft candy (toffee almost), nostalgic, fruity, acidic, citric, soft and sticky. Lovely, and I like the concept. Would love to have it again and give it more time.

Tap @TCBW 2016. Hazy amber color. medium size, white head, stays. Fruity, citrus, rubbery, floral sweet and some apples in aroma. Citrus, clove, ginger, sweet and some apple juice in taste. Cherry stones in aftertaste. Way too sweet for me.

Tap at TCBW 2016. Bit hazy yellow liquid. Littlebit of froth. Hints of aromas usually common to lambic style - horseblanket and barnyard, hints of vinegar. Vinegar and apples at first. Hints of gooseberries in the middle. Bit of sweetness in the end. Quite nicely balanced sour ale.
