COMMERCIAL DESCRIPTION
A blend of New Morning and 18 month aged 3 Fonteinen Lambic refined for at least 12 months in bottle. It has a surprisingly citrus nose of leather, cellar and animal with hints of dried flowers and honey. Lasting and sapid in the mouth with a sour finish that always makes the lovers of this blend smile.
This beer could very well make you develop an addiction for spontaneous fermentation and turn your entire world upside down!

After a mechanical breakdown, 3 Fonteinen Brewery of Beersel (possibly the best Lambic blender in the world) had economic damage in the summer of 2009. The news caused such a stir in the International beer movement that I called Armand to know how things were. As he needed to sell his Lambic, I immediately got inspired to blend our New Morning with his beer. We selected three 18 month old Lambic barrels that we siphoned in a small tank on our truck. The journey back was long and hard, myself and Manuel took turns driving through Belgium, France and Italy only stopping for gas. After days hand bottling and months of maturation, the outcome has gone over and beyond our expectations and we can say with pride that it was worth it!

On tap at B Side. Poured a nice hazy golden orange color with a medium sized white head. Aroma was nice straw, funky brett notes, Flavor was light grassy notes, straw. Funky, tart and sour, but not overpowering.

Pours a hazy golden orange from the bottle with thin bubbly white head that leaves light lace. Aroma is funky farmhouse Belgian gueuze with a hint of tannic musk. Taste follows, light sourness, more funky, slight metallic note. Definitely pretty darn good.

On draft at Pizzeria Paradiso DuPont circle. Pours a hazy gold with a fine white head. Funky tart Apple nose. Flavors of peach and tart sour cherry. Nice.

UPDATED: JAN 26, 2015 Equilibrated season beer with second fermentation using Brettanomyces. Slightly lead and earth aroma. Good acidity and flower aroma. Interesting connotation of season tradition and wild yeasts.

Wonderful stuff. Del Ducato gave the touch of gold to this saison. Great lambic bretta aroma here. Pours hazy golden with good head and lacing. Tart finish. Citrus and light grass. Very nice balance. Wonderful beer. Tap at Churchkey.

Bottiglia 75 CL. Colore oro pallido con una schiuma fine e persistente. Nell’aroma la fa molto da padrone il lambic 3 fonteinen con aggiunta di leggere note fruttate. Al palato è molto leggera e di facile bevuta con un’acidità al punto giusto, la carbonazione è abbastanza alta. Un ottimo blend insomma. Birra fantastica.

Bottle @ Appellation Comely Bank tasting. Thanks to Benjii for this one. Appearance - cloudy golden orange with a very thin head. Nose - oranges and ginger (once it was pointed out to me). Something farmyard and foul is lurking in the background. Taste - more citrus, ginger and going into that dirty note again. Palate - light to medium bodied with a sour but not tight and lean texture. It’s dry and sour on the finish, but the finish isn’t the long persistent dry finish I’d hoped for. Overall - after great anticipation this was disappointing.

Bottle at tasting. Pours hazy gold, no real head. Lovely nose, funky, bread, some citrus. Ginger is there on the taste, along with more citrus. Quite thin. Aroma the best part!
