A blend of New Morning and 18 month aged 3 Fonteinen Lambic refined for at least 12 months in bottle. It has a surprisingly citrus nose of leather, cellar and animal with hints of dried flowers and honey. Lasting and sapid in the mouth with a sour finish that always makes the lovers of this blend smile.
This beer could very well make you develop an addiction for spontaneous fermentation and turn your entire world upside down!

After a mechanical breakdown, 3 Fonteinen Brewery of Beersel (possibly the best Lambic blender in the world) had economic damage in the summer of 2009. The news caused such a stir in the International beer movement that I called Armand to know how things were. As he needed to sell his Lambic, I immediately got inspired to blend our New Morning with his beer. We selected three 18 month old Lambic barrels that we siphoned in a small tank on our truck. The journey back was long and hard, myself and Manuel took turns driving through Belgium, France and Italy only stopping for gas. After days hand bottling and months of maturation, the outcome has gone over and beyond our expectations and we can say with pride that it was worth it!

A lovely tart funk grows out of the lovely straw base. Hazy copper with a thin head. The sour funk dries out the straw base of the beer. Makes it feel much thinner and fade quicker.

Bottle thx vindueskigger. Pours muddy orange with a White head. Aroma barnyard, very funky, light acetone like notes, horseblanket. Taste is very funky, barn, fruity, quite thin body.

On tap, "Birraio dell’anno 2015", ObiHall Firenze. Colore giallo scarico e torbido, con accenno di schiuma bianca. Naso citrico, erba d’estate, fiori secchi, torba fresca umida, aia di campagna e coperta di cavallo. Carbonazione vivace e aspetto un po’ stile saison. Trama fra watery e oleosa. Acidità equina poco duratura ma inizialmente acuta, con sorprendente recupero salino. Piccole note dolci e stemperate di miele. Finale di beva rotondo ma secco, estremamente fresco e galvanizzante. Ottima birra acida originata da un blend con una lambic belga di 3 Fonteinen invecchiata 18 mesi e lasciata rifinire almeno 12 mesi in bottiglia, con interessanti aspetti salini tipici di una gose e un mood un po’ funky stile farmhouse ale.

Une sour ale d’une rare complexité. Nez à la fois animal et fruité (fraise, agrumes) et végétal (herbes aromatiques). En bouche, la Beersel Morning offre un véritable voyage gustatif. Des arômes de fines herbes, printanières, se transforment en arômes de levures sauvages, de viande,..le tout sur un fond acide qui offre équilibre et fraîcheur. La finale relativement longue est acide. Très agréable à (re)boire.

Kick 061115. Golden-orange colour with no head. Aroma is citrus, funk, yeast, spices. Flavour is funk, citrus, herbs, citrus, yeast, spices, cinnamon. Very nice beer.

Looks.. Orange/yellow, sml white head. Smells..floral, lambic yeasty dank, old citrus Tastes..wild ale sour immediately, citrus fruity, brett yeast character, light caramel malt and oak dryness at finish. It’s the 4th bottle I’ve had of this over a couple of years, a great story an nice beer.

Fra fat på ØST, del Ducato krankupp jan-16, sammen ned Ovesen: lett uklar dyp gylden med ok skum (litt kniplinger og film). Granskudd, furunål, honning og gjær i aroma. Ingen gjær i smaken, her finner jeg nevnte granskudd og furunål, aprikos, sitron, mandler og honning. Mykere og mer kompleks enn de to foregående (Chrysopolis og Vieille vieille). Avlsutningen er balansert med en fin honningsødme.

From tap at Øst at del Ducato tap takeover with JMD 14.01.16. Cloudy golden. Some head and lacing. Acid lambid aroma, sour citrus. More complex and vineouss taste, with honey and lemon. Dry mouthfeel. Taste is lingering on.
