A blend of New Morning and 18 month aged 3 Fonteinen Lambic refined for at least 12 months in bottle. It has a surprisingly citrus nose of leather, cellar and animal with hints of dried flowers and honey. Lasting and sapid in the mouth with a sour finish that always makes the lovers of this blend smile.
This beer could very well make you develop an addiction for spontaneous fermentation and turn your entire world upside down!

After a mechanical breakdown, 3 Fonteinen Brewery of Beersel (possibly the best Lambic blender in the world) had economic damage in the summer of 2009. The news caused such a stir in the International beer movement that I called Armand to know how things were. As he needed to sell his Lambic, I immediately got inspired to blend our New Morning with his beer. We selected three 18 month old Lambic barrels that we siphoned in a small tank on our truck. The journey back was long and hard, myself and Manuel took turns driving through Belgium, France and Italy only stopping for gas. After days hand bottling and months of maturation, the outcome has gone over and beyond our expectations and we can say with pride that it was worth it!

[9/27/14] Draught sample at Borefts Beer Festival 2014 in Bodegraven. Hazy yellow. Nice funky aroma with oak and some lemon. Sour funky flavor with some fruits. Medium-bodied. Very nice!

Ragnampiza (621) - Rome / Lecce, ITALY - OCT 6, 2014
Keg at Eurhop beer festival. Light golden orange, pretty hazy, with a nice, creamy and persistent white head. The lambic component pretty much dominate the aroma. Wet tea leaves, barnyard, cellar but surprisingly some citrusy hop notes as well. Rye bread and fruit esters in the background. A hint of rubbery smoke too. Chunky but at the same time extremely refreshing and easy to drink. Lovely lemony sourness, nice bready and wheaty presence from the saison. Pretty big bitter aftertaste. Average carbonation, medium body, creamy texture. Simply great.

@ Borefts 2014. Golden colour, white foam. Aroma of tart green apples with notes of spices (anise?) and citrus. Reminds me a bit of a sour saison. Good beer.

Draught at Ma Che Siete Venuti A Fa’. Pale hazy golden-yellow with a frothy, lasting white head. Aroma is more lambic-like, funky, sour, fruity. Some more yeast in the flavour with a lively and tart body, dry, lemon, green apples. Intriguing, tasty.

Draft at Ma Che Siete Venuti a Fa. Pours very hazy golden with a white head. Aroma is massive 3F Gueze upfront, barnyard, cobwebs, musty cellar, tart fruits, citrus. Flavor is light sweet and over moderate acidic. Medium to full bodied with moderate carbonation.

Cloudy white yellow color. Frothy white head. The nose is moderately tat with citrus, leather and oak notes. The mouth is medium body, acidic, but perfectly balanced with a decent malt back bone. Fairly agressove sour finish with oak and leather persisting. Excellent stuff.

Bottle, shared at RBAG 2014. Hazy orange, briskly carbonated generating a lively white head. Aroma of unripened berries, light rubber. Moderately sour and quite funky, again unripened berries come to mind, earthy/rustic character. Lighter body, quenching. Very nice.

My Bottom Line:
Musty lambic drives this brew to citric splashes, as herbs and hops attempt to make room for themselves.

Further Personal Perceptions:
-A creamy head of foam settles atop the cloudy beige.
-Even though the percentage of lambic in this blend is much lower than that of the Saison, I felt like the Saison was easily overtaken aroma and flavour wise.
-The prickly, small bubbles could be softer to increase drinkability.
-Funk and sourness are rather loud throughout.

750 ml bottle shared at Kulminator. Pours light hazy yellow with a fine white head. The nose is very subtle 3 Fonteinen lambic funk, sour apples, tads of white pepper. The taste has no lambic trace whatsoever, making the saison overtake everything. Pity that the 3 Fonteinen name is used in this way.
