A blend of New Morning and 18 month aged 3 Fonteinen Lambic refined for at least 12 months in bottle. It has a surprisingly citrus nose of leather, cellar and animal with hints of dried flowers and honey. Lasting and sapid in the mouth with a sour finish that always makes the lovers of this blend smile.
This beer could very well make you develop an addiction for spontaneous fermentation and turn your entire world upside down!

After a mechanical breakdown, 3 Fonteinen Brewery of Beersel (possibly the best Lambic blender in the world) had economic damage in the summer of 2009. The news caused such a stir in the International beer movement that I called Armand to know how things were. As he needed to sell his Lambic, I immediately got inspired to blend our New Morning with his beer. We selected three 18 month old Lambic barrels that we siphoned in a small tank on our truck. The journey back was long and hard, myself and Manuel took turns driving through Belgium, France and Italy only stopping for gas. After days hand bottling and months of maturation, the outcome has gone over and beyond our expectations and we can say with pride that it was worth it!

Bottle shared thanks to Lukaduke! Pours hazy straw yellow with big foamy brett head. Nose is musty tangy tart citrus, lemon, cheese funk. Taste is bright bubbly citrus, hay, lemon, brett funk, straw. Finish is super dry, yeasty spice, funky hayfield, orange. Very nice!

Bottle @ Voldby Tasting. Pours slightly hazy yellow with a white head. Aroma of light malt, yeast, light sourness, grapes, wood, lemonzest. Flavor is light sour, yeast, white wine, wine grapes, wood, citrus, lemonzest. Medium body, average to lively carbonation, light acidic finish. Lovely beer. 250414

Bottle. Smag på verden Voldby. Frothy White good fully lasting head. Pale yellow colour. Light malty and hoppy powerfull sour aroma. Moderate bitter wonderfull acetic sour flavor. Long great sour finish. Creamy palate. very nice.

Bottle@Voldby. Golden/yellow color with a good white head. Spicy aroma. Taste is a bit sour, fruity, spicy, notes of honey and floral. The best Lambic I have tasted.

A spicy lambic that first has some sour tones, then the spices, followed by fruit that grows in taste after the first sips, the finish is bitter. This is a beer that demands a slow taste, and demands your complete tongue. Somehow it reminded me of a champagne like beer, saisonminded but more spicy. Recommended. ---Rated via Beer Buddy (iOs)

Lo spirito e il corpo del buon vecchio lambic sembrano trovarsi a loro agio nella terra emiliana. L’equilibrio di questo prodotto è davvero perfetto: l’acidità è preservata nella sua forma avvolgente e trascina con sé un’insieme di note fruttate molto varie che accendono in bocca una primavera di gusti. Un abbraccio tra due paesi e due stili che commuove!

Pours a slightly hazy golden color with two finger of fizzy white foam. The nose is a mix of rustic grain, hay, lemon, stonefruit and horse blanket. On the palate its follows the nose nicely with a spritzy barnyard backbone heightened by floral grass, dusty lemon, nectarine and a touch of wet oak. Really wonderful flavors all coming together into a complex dry dusty finish. YUM !

Thanks to Tommy for sharing this one! Pours a clear golden with a low white head that offers good lacing. Aroma is really fresh, fruity and full of brett aromatics. You can feel the lambic in there. Taste is lightly tart, fruity and spicy, really like a good and light saison. There is some barnyard/funk in there but it is really well integrated and classy. Mouthfeel is juicy, carbonation medium-high (quite a festive beer if you ask me!). I really, really enjoyed this one... (if only) I could drink this all the time...
