A blend of New Morning and 18 month aged 3 Fonteinen Lambic refined for at least 12 months in bottle. It has a surprisingly citrus nose of leather, cellar and animal with hints of dried flowers and honey. Lasting and sapid in the mouth with a sour finish that always makes the lovers of this blend smile.
This beer could very well make you develop an addiction for spontaneous fermentation and turn your entire world upside down!

After a mechanical breakdown, 3 Fonteinen Brewery of Beersel (possibly the best Lambic blender in the world) had economic damage in the summer of 2009. The news caused such a stir in the International beer movement that I called Armand to know how things were. As he needed to sell his Lambic, I immediately got inspired to blend our New Morning with his beer. We selected three 18 month old Lambic barrels that we siphoned in a small tank on our truck. The journey back was long and hard, myself and Manuel took turns driving through Belgium, France and Italy only stopping for gas. After days hand bottling and months of maturation, the outcome has gone over and beyond our expectations and we can say with pride that it was worth it!

Craft beer fest Vienna. Yellow color with huge whites head. Yeasty aroma with funk. Nice sour taste with vinous notes, wood, light honey, spices. Tasty.

On tap @ What’s Brewing 15. Pours hazy golden, with a big creamy head. Aroma is vinegar and wooden barrels, with brett and farmyard notes, as well as nuts, leather and dry earthy notes. Medium body, with average carbonation. Flavour is sour, with vinegar, wooden brett, oak barrels, fruit peel and citrus peel, as well as nice bretty farmhouse notes. Lingering dry, tart finish.

Pours a very hazy and very dark orange color that’s almost brown with apricot colored edges and a two finger frothy, off-white head. Excellent retention, only slowly fading into a thick, lasting ring. Large chunks of soapy lacing left behind. Some noticeable yeast sediment even with a careful pour. Still looks great though. Earthy, funky aroma with zesty spice, crisp fruit, barnyard character, dry oak and subtle acetic vinegar. Really nice blend of saison on lambic characteristics. Lambic is a small portion of blend but is really strong in the nose. Saison notes of peppery spice, flower petal, barnyard funk and bready yeast. Citrus and light fruit notes with some apricot, orange peel and grapefruit. Nice and musty with lactic acid and funky bugs but the lambic notes don’t overpower the saison character . Medium bodied with a tart puckering mouthfeel and and a nice balance of saison notes with a touch of lambic. Earthy funk with barnyard must, straw and hay with zesty spice, flower petal and sweet acetic acidity. Lots of coriander and pepper followed by funky farmhouse yeast, orange peel, curaçao and grapefruit before finishing with dry acetic acid and other lambic notes. Dry and funky with oak and a lingering, subtle acetic vinegar flavor that leaves me wanting more.

Big, weird bottle in a taster. Pours golden with a white head. Aroma of light tartness, some funkiness, oak, some light fruit notes, and some floral notes. Flavor the same with a nice blend. Average texture. A really nice beer that’s not too sour, and it has a nice complexity.

Thanks! to caesar. 750 ml. bottle sampled @ ZZT XIII. Clear orange, little white. Nose is very big on lambiek, lovely, lots of horse blanket, funk, raw lambiek, hay, light pepper. Taste is a touch muted still, light plastic touch, light touch dull, malts mixed with nice horse blanket, funky, hay, barnyard, lemon, zest. Nice sparkling carbonation. A bit almost like a muted geuze, nice – does make me wish a bit for just a regular 3F geuze. Nice beer still.

Bottle @ ZZT, small sample. Slight hazy golden to orange color, short head. Aroma of slight barnyard, horseblanket, citric acid, fruity citrus. Soft sour in taste, bit citric sweetness, some spicy saisonesque notes. Aroma has lots of lambic in it, but in taste it’s more of a blend of sweet and sour lambic with a saison or amber like belgian beer. Nice stuff.

Bottle @ ZZT XII. Hazy pale golden color, small white head. Aroma is nice fruity sourness. Taste is nice fruity sourness, a bit hard to describe but quite nice. Suitable body and carbonation. Nice.

Bottle @ ZZT13. Clear golden yellow colour with a small white head. Smells dusty, horseblanket, cellar, nice. Tastes slightly sour, slightly brett. Medium body, soft carbo.

On tap at brewmakers dinner, Kick. Unclear orange body with a small off-white head. Aroma is acidic fruity, spicy and funky. Flavor is sour fruity, herbal, spicy, sweet malt, lemon and funky Brett. Amazingly complex, the New Morning Saison is running most of the show by the first sips and then letting the Lambic flavors develop more and more, ending quite funky. Nice balanced body and really good in aftertaste. A really fine balanced beer between sweet and sour, also the suble spicy yeast and the more pronounced Brett flavor. Simply a great creation.

On tap at Kick. It’s a hazy one, golden-orange in colour and almost headless. The aroma is quite weak at first, it’s lightly spiced and herbal, cinnamon notes, there’s lambic funk, lemon and leather too. It’s medium bodied, funky, tart and softly carbonated. Oranges, lemon juice and a faint spiced, herbal and malty touch. Cinnamon hints. Lasting mostly fruity finish. Delicious indeed. Lovely. 151022
