COMMERCIAL DESCRIPTION
A blend of New Morning and 18 month aged 3 Fonteinen Lambic refined for at least 12 months in bottle. It has a surprisingly citrus nose of leather, cellar and animal with hints of dried flowers and honey. Lasting and sapid in the mouth with a sour finish that always makes the lovers of this blend smile.
This beer could very well make you develop an addiction for spontaneous fermentation and turn your entire world upside down!

After a mechanical breakdown, 3 Fonteinen Brewery of Beersel (possibly the best Lambic blender in the world) had economic damage in the summer of 2009. The news caused such a stir in the International beer movement that I called Armand to know how things were. As he needed to sell his Lambic, I immediately got inspired to blend our New Morning with his beer. We selected three 18 month old Lambic barrels that we siphoned in a small tank on our truck. The journey back was long and hard, myself and Manuel took turns driving through Belgium, France and Italy only stopping for gas. After days hand bottling and months of maturation, the outcome has gone over and beyond our expectations and we can say with pride that it was worth it!

Bottle picked up in California. The beer pours to a glowing amber body with a tall creamy white head and sexy lacing. The aroma is like an unblended lambic or gueuze. Very subtle. Light floral hops. The flavor is very Belgian. Lots of gueuze/unblended like components. Subtle spices. Floral hops. The palate is medium light bodied and super easy drinking.

Bottle, this is lambic blended with a base beer which is a sort of witbier with green peppers and some flowers in it. The base beer is actually not as bad as it seems but it clashes with the lambic here, certainly not bad, easy to drink, but the pepper notes detract form the firm sourness creeping through.

Bottle, 3 years old. Amazing nose of 3F lambic plus saison: lemon, grapefruit zest, leather, old books, lightly malty. Pretty clear amber, persistent head. Lambic flavor, yet more mild, bit of biscuity malt, wheat, orange, quite a bit of sweetness, but with the horse blanket funk underneath, and just enough acidity, plus some interesting spice. Maybe a touch too much residual sweetness, but damn good all around.

On tap at the Jeffrey, hazy golden body with light white head. Sour nose with yeasty esters and floral aromas. Funky taste with tart peach and lemon flavors. Spicy finish with slight wood notes. Prim looking stargazer.

Tap @ Bishops Folkis. Cloudy yellow, huge thick creamy white head that lace the glass. Ooh, very nice bretty funky aroma with grapefruit rind, apples, wet wood, damp cellar and some cat piss. Very nice! Taste is citrus, apples, hay and some brett. A bit dissapointing cause I actually thinks it could have been a bit more sour. Medium, soft, slight oily to dry. Very good aroma, but flavour dorsn’t match.

Bottle during RBWG. Pours a cloudy orange with no head. Fruit cereal malt and yeast aroma. Medium mouthfeel with a nice funk, grass, and light tartness. Really good.

Stark karbonisierter Antrunk, hell, trocken fruchtig säuerlich. Die Säuerlichkeit nimmt etwas ab, hell brotig. Frisch säuerlich mit leichten Kräuternoten bis zum Schluss, zu stark karbonisiert. 12/12/8/11/9/11

Bottle @ home. giallo tra il dorato e l’ambrato.velata Schiouma bianca, fine, mediamente persistente. al naso aroma fruttato, agrumato, citrico in generale. Muffa, cantina, legno bangnato, frumento. Leggere note florali e maltate. Gusto acido, intenso, persistente, citrico. amara, mai eccessiva, leggermente sapida. Molto carbonata, poco corposa, solo leggermente calda. Equilibrata, armonica.

Bottle. Hazy golden, whitish head. Funky notes, some sour fruity breadyness and bit of earthyness in aroma. Later some citrus and wooden notes appears. Lemon juicyness, bit of spicyness and leathery notes in taste. Also some nice funkyness is there. Good tasting and the drinkability is just about right here with some sour fruity notes in finish.

Draft. Small off-white head atop cloudy apple cider body. Aroma is mild sweet, funk, barnyard, lemon, sweat sock, astringency, some straw. Taste is medium sweet, lemon, barnyard, sweat sock, light straw. Light-medium body, acidic, light stickiness.

4 oz pour on draft at B Side. Hazy yellow with off-white head. Aromas of vinegar, acidic tart notes, hay, floral. Tastes of tart, citrus, lemon lime, vinegar, floral, barnyard funk. Medium-light body with a dry and tart finish.
